For a small town, Carbondale sure has some little gems when it comes to food. Phat Thai is another one. Located in downtown Carbondale, with a name like "Fat Thai", I wasn't sure what to expect but upon walking in, I noticed that the restaurant looked very chic. I have been all over SE Asia but Phat Thai has some of the best Thai food I have eaten anywhere. There were some nice surprises on this menu. Crisp tofu balls in coconut were novel and tasty, with lots of crisp-tender veggies. Pad Thai was more peanuty than most. Great food, but you should know that it is not authentic Thai food...and they do not claim to be either! Phat Thai in Carbondale, Colorado was OK, and while we know Thai well, we found this experience somewhat lacking. Maybe because the restaurant was pretentious, and we were in mountain mode. Had been there several years ago and think it was much better then. Had the Firecracker Shrimp...were there always only 4? The roasted Brussels sprouts were a little al dente even though well browned "after the fact." The spicy basil chicken was not spicy unfortunately. Probably would not go back.

Awesome food and cozy atmosphere. Service was a bit slow on this particular visit, but great staff. Phat Thai is a must for dinner whenever visiting our friends in Carbondale.

The 90's are over. Wait staff treating patrons like dogs is so OVER!. We are locals and we do love the food but I'm not paying anymore to eat here and hope I'm treated well, with respect. Food is not that good. Silly!

We went here based on a review that stated Phat Thai was better than Chang in Glenwood Springs. If you go expecting traditional Thai food, you're gonna have a bad time....that said, their take on Thai with the flavors and spice are worth the time to dine here. Solid food with solid flavors.
