Every time we visit Mt. Princeton Hot Springs and Spa, we eat lunch or dinner at El Paraiso. Never disappointed. Food and service is great! My favorite dishes are tacos al Pastor and chili relleno.

I have very low expectations for Mexican food in Colorado. This place was better than most. Fun and friendly waitstaff, fast service. Maragarita was delicious and very strong. Nice salsa on the table. Carnitas tacos were OK but not crispiness. Great family place.
