The Hatch Rotisserie & Bar specializes in wood-fired comfort food, craft & classic cocktails, and an extensive whiskey selection. It is small and bustling and reservations are always recommended. A full dinner menu is served at the 15-seat bar (no reservations) and the dining room includes an assortment of banquette seating (half booth) and high top tables. Dinner service starts at 4:30 PM daily. Children are welcome however there is no kids menu or high chairs/boosters available due to space constraints. Please contact the restaurant directly with special seating or dining requests.

They only serve it on Sunday. It was well seasoned and cooked just right. Service was excellent and we split the home made key lime pie for dessert.

This is the original higher end restaurant in Paso. A big bar along one wall serving fine cocktails. Great food, mostly American style. Don't miss the roasted Brussels Sprouts.

Had a reservation here on a very busy Thursday evening in early March. We were very excited to have a meal here given how highly rated and popular the restaurant is. We enjoyed the atmosphere and our main entree (the chicken). The potatoes were okay...- just lacked any flavor. The key lime pie was good. The main reason for the low rating was because of the artichoke appetizer that was served. Not only was it devoid of any flavor - it was completely inedible. Our waiter saw the difficult time we were having with it. We complained about its preparation and the fact that we did not believe it was prepared/steamed sufficiently but it fell on deaf ears and we returned it. A better waiter would have removed the charge from our bill after we returned it or would have offered up an alternative appetizer - neither alternative was given. In hindsight - we should have complained to the manager but we were on vacation and I just didn’t feel like getting into a debate over an appetizer. I would have expected that a restaurant that is this popular/successful would have their servers more well trained (customer focused) in handling objections to a menu item and how to ultimately satisfy the customer. From what we could see there are plenty of restaurants in the Paso area. Unfortunately - we would not recommend this one.More

My husband and I had dinner at The Hatch during our visit to Paso and I would highly recommend. I had the chicken and my husband had the Shepards Pie, both meals were delicious! The service was also excellent.

We were able to grab seats at the bar since we didn’t have a reservation. The bartenders were great and mixed lovely cocktails in addition to providing amazing service. The food was good, especially the pimento cheese appetizer.

Very noisy restaurant to the point of needing to yell to be heard across the table. Food was decent but not great and limited selection. Wine only available “on tap” and overpriced with limited options

We had reservations for six o'clock and somehow, it was cancelled, and the restaurant was full, and there was a two hour wait. We were devastated since we did not want to eat that late. The hostess was very helpful and asked one of the...managers to serve us in the bar next door. The food was great, the service outstanding as well as the drinks.More

My husband and I didn't have a reservation, but were seated at the bar. We shared the mushrooms (NOT the typical button mushrooms sauteed in butter), brussels sprouts (fabulous, with chunks of bacon), cornbread (truly, to die for, with rosemary and honey), and the Caprese...salad (which was gently seasoned and not overwhelmed with balsamic vinegar). We both tried small batch bourbons, and the staff put the bottle next to our glasses so we could read the labels and take photos if we desired. very friendly, personal service, without being smarmy. I strongly recommend this restaurant and will go back there next time I'm in town.More

My friends and I sat at the bar and Ari provided us with exceptional service. We shared the mushrooms, skillet corn bread, beef rib, and rotisserie chicken. All were amazing but our favorites were the beef rib and the mushrooms. We also really enjoyed our...craft cocktails recommended by Ari.More

The fried chicken was some of the best we've ever had - sounds cliche, but its true! The potato salad was some of the best too! For a healthier side, don't miss the rotisserie chicken on salad. That chicken is great too!!

We didn’t have a reservation, so we were seated at the bar, which turned into a real blessing. The bar staff were warm, engaging and efficient. Food was generous in proportions and absolutely delicious (try the Hatch Burger - one of the five best burgers...I’ve ever had!) My wife had a cocktail that se said was perfect and I had a generous pour of a local Prosecco.More

It took a while, but they found us room for a party of five at the bar. Once there, the service was amazing, as was the quality of the drinks and the food. The hot chicken special was limited (the party next to us raved!)...but the rotisserie chicken and the steak were both wonderful and everything got a big seal of approval from our son, the chef! The small, friendly space created was one of the high points of our trip.More

Moderately/high prices. Food was good but nothing special. Meat intensive, not many light fresh options. Would have liked to have tried the fried chicken, but they only serve it on Mon and Tues.

We loved their hospitality and great service! The drinks were awesome. A truly classic old fashioned and the Phoenix was a spicy habanero marg. Loved it but would have maybe been better in a marg glass with tajin on the rim? Food came out really...fast! The skillet cornbread was killer and crisp with an amazing hot honey thyme drizzle and flaked salt. We shared the 14 oz ribeye special with crispy potatoes and it was plenty and quite good. No room for desert. Our server JP was great I'd love to be back for their fried chicken night!More
