This place does not disappoint. Get reservations there will be a wait otherwise. But it was definitely worth the wait. Love the craft cocktails. Food was awesome. Braised ribs over jalapeño potatoes covered in Chile Verde sauce. Phenomenal dish..

Everwhere we wnet in Paso Robles, people recommended Fish Gaucho. We were not disappointed. My husband and I shared the ceviche and a BBQ chicken burro. Large portions, uniquely made. Good service and located downtown. We recommend as well.
