My general motto is "great service seasons the food." However, this experience has caused me to rethink that resolution. I can tell that it's a great restaurant with an even greater reputation. I was so excited because it served my favorite dishes that I can't...find everywhere. The ambiance was unbelievable. Our table was amazing. The vibe was cool and friendly. And the SERVICE? Our server was at our table within 2 minutes after being seated. He was professional, friendly and knowledgeable. We ordered dirty martinis. They forgot the dirt, but within 1 minute we had our olive juice. We ordered escargot and sweetbreads for appetizers. Neither was seasoned... At all. Maybe more garlic, butter and wine sauce would have compensated for the lack of flavor. The sweetbreads, which were prepared in a unique fashion , were in this black, balsamic, sauce, and the meat was tough.Sweetbreads are usually tender to the touch as well the tongue. But again, the service and ambulance made it bearable. The entrees were Pheasant and Duck. The pheasant was almost a repeat of the sweetbreads, with that same sauce or a reasonable facsimile. The duck wasn't bad, but not what we expected. I am a foodie with an enormous international pallet and appreciate a variety of flavors and preparations , but I was thoroughly disappointed. I'm not recommending that if one is contemplating patronizing this establishment they should cancel their plans. But I am saying that you can count on great service and don't shocked if the mall doesn't live up to the rep. After all we all have a bad day or bad night. It could have been the chef or sous chefs trying something new on their own. I'll go back one more time and let you know....More

My cousin treated my husband and me to Paon Restaurant for lunch. The bread was freshly baked & tender. My husband & I ate the Sea Bass (fish for the day). The fish was fresh & delicious including the vegetables & potato that were served...with it.More

We usually eat in the bar, and the food and menu are excellent. The dining room is very good, but a little pricey.

Five stars definitely for the food. The veal sweetbreads were among the best tasting dishes I’ve eaten in several years, and the sea bass entrée was perfect. I would have preferred a more traditional onion soup to the pureed version, but it was still very...good. I tried my partner’s lamb and found it also cooked to perfection. Incongruous was the bread which had the texture and taste of Wonder Bread, a real problem for a French restaurant in a town with very good bread. The noise level around 7 PM was so high that the waiter had to walk around the table repeating the day’s specials individually. In general, the wait staff was professional but detached; a little warmth would have gone a long way. They appear to have a nice outside patio that could be relaxing in warmer weather. I hope to return with our Labrador Retriever.More

Here to celebrate my husband's birthday with his brother and sister-in-law. From the initial greeting to the wish for a good evening as we left, we all had a great time. Food was delicious, and presentation excellent. We shared a warm goat cheese appetizer ....Delicious. Pear salads were beautiful and also delicious. Four different entrees, each beautiful in its presentation, all declared heavenly. Impressed by the knowledge and skill of the sommelier, whose recommendation got a wine my sil loved. Our first visit in all the years we have been in Carlsbad in January, and I am only sorry we didn't get here sooner. A very pleasant atmosphere and decor, too.More

We really enjoyed our dinner here the first night. The blue crab salad was okay, the crab was over cooked & not flaky like it should have been. Our dinners were wonderful. I had the sea bass & my husband the sirloin. Both cooked perfectly...& the collaboration of flavors for both dishes were spot on. Loved the flourless chocolate dessert. Didn’t care for the inside decor, a little dated. The outside dining is beautiful. The service & wine were excellent.More

Excellent meal! Very good service! My wife had the escargot and scallops while I had the onion soup and rib eye steak. We both loved our meals. We split the green mint ice cream dessert and each had a cappuccino. We each had a cocktail...to start (well made) and a glass of nice wine with dinner.More

Had birthday dinner @ Paon last evening and everything from drinks, to dinner, to service was a 5 star experience. I ordered a Carlsbad Cosmo - absolutely delicious/husband said his gin martini was fantastic. The pheasant was out of this world, crispy on outside, delicious...and flavorful on the inside. Husband had Chilean sea bass special which he said was like butter! George, our server, was knowledgeable and presented the food so well that he made us instantly hungry. He was fun and personable as well. Overall, 5 star experience.More

Highly regrettable, the management informed me that their patio is NOT dog friendly. The patio is divided into two sections. Surely one side could allow dogs. Most area restaurants do.

This fabulous restaurant is located just off Carlsbad Village Drive in the “village “ area of downtown Carlsbad.
