They have the greatest Mexican food with a great menu and open from 7am until 7 pm daily. It's hard to decide what you want because it's all so good, they do have some wait around the lunch time but it's worth it.

There are several good chimichangas to be found on the Valley but nothing compares to the ones served at the original Carolina's. Very authentic. Place was crowded at 1:30 on a Friday. People from all over Phoenix. authentic corn tortillas, meats, hot salsa. Had my first tamales. Mushy corn paste around meat. Coarse tacos. Defiantly call ahead to avoid waiting because most of downtown Phoenix is aware how good the food is. AND very reasonable. Check out their on line menu...you can't go wrong! Very Very Good!

I love the burritos especially the green chile with beans it is super good I think their secret receive are the tortillas that are made there. This restaurant was chosen because we were looking for authentic Mexican food on our last night in Phoenix. Been going to Carolina's since the 80s and not much has changed. Don't let the looks of the place fool ya, honestly they're not known for their ambiance, it looks more like an industrial bulilding than a restaurant. A coworker and I stopped at Carolina's for lunch. I had a Green Machaca Burrito and he had a regular Machaca Burrito. Mine was super hot - meaning fresh out of the pot.
