Phoenix Biltmore adjacent, this medium-scale restaurant has proficient wait-staff and clearly above-average training of them. I'm just disappointed that a majority of the staff were not wearing protective masks. Portions are huge so select judiciously. For us, both not-so-gluttonous eaters, an appetizer, a salad, and...a main course were shared for total satisfaction. The smoked B.C. Salmon appetizer ($18) was warm-smoked, not lax, and cooked to heavenly perfection. Served with toast points and the chef's sauce of sour cream, tarragon, garlic,and dill this is the best in all of Phoenix! We felt a bit rushed on this Saturday night, but our very professional waiter realized that we weren't about to be scurried off, so he relaxed, allowing us to enjoy our post theatre soirée amidst Hillstone's old-school-steakhouse-modernized ambiance. The Wedge Salad ($14) was enhanced with beautiful golden beets and had a generous amount of blue cheese and bacon. We ordered the barbecue sauce on the side of the ribs ($34), which was the correct choice. The ample rack was fall-off-the-bone tender. Thank goodness that we asked for the ever-so-sweet sauce on the side. The accompanying potato fries were excellent as was the mound of slaw of cabbage, kale, and I think jicama. The Jackrabbit cocktail ($15) was delicious and refreshing, with just the right amount of Campari, and the Sainte Margeurite rosé was a perfect pairing to the smoked salmon and the meal. They no longer serve roast prime of beef. .French dip is sub par and not cooked on pre.ises. They purchase it from a 3rd. Party purveyor presliced. They just warm it up and slap it on french bread and charge an exhorbant price. Boar's Head...is better quality than the beef they use in their french dip sandwiches.More

I do not know how the server always give to all customers the check, even when you do not ask for it , is really not comfortable that they put the check on the table , I felt very bad with than behavior. I want...the check when I ask fir it not before . It appears that they want you leave the place When de waiter goes with the check I was still working in second plateMore

This was my second time at Hillstone. What a memorably great meal! Everything was super yummy, service was great (thanks Blake!), and, even though it was a very full crowd we could still comfortably able to hear each other. Don't miss the delicous grilled artichokes....Two patrons had filet mignon and found it as good or better than any steakhouse, with wonderfully done broccoli and potatoes. The Thai noodle salad was incredibly flavorful. Save room for the legendary ice cream sundae with divine Belgian chocolate sauce Can't wait to go back. Make sure you have a reservation for dinner.More

Called ahead for a lunch reservation and specifically asked for seating on the patio. Was told that the patio is "first come first served" and nothing else. When we arrived there was one party seated on the patio and NO wait for tables indoors or...out. We checked in with the hostess and told her we wanted the patio and were informed that they only serve a "limited menu" out there - namely drinks, sushi and starters. When we asked why, we were told that it's their "policy." Trying to understand this ridiculous rule, I asked if it was harder to carry a sandwich to the patio than a plate of sushi. We were then told that the patio was used only for overflow bar seating when there was a wait for tables. But, there was ZERO wait for tables...and by their own admission they're willing to serve some food...but not other food - so staffing clearly isn't the issue. It was a beautiful day and we were stuck eating in the dark, dungeon like dining room. (Also - they've removed any trace of the fun retro-historic Phoenix art they used to have). If we'd known of this stupid rule, we would have chosen another restaurant that allowed outdoor dining. Total waste of time and money...and I won't be going to ANY of this company's restaurants again. NOTE - I'm a reasonable person and this was their third chance to change my opinion of their restaurant group and they blew it.More

I love introducing my friends to Hillstone because I know they will love going there as much as I do! The reason is simple: Amanda Murgas, Executive General Manager, is incredibly exceptional at making you feel valued and appreciated on every visit! Upon my arrival,...I was greeted by Amanda, hugged, and welcomed back enthusiastically. She was introduced to my guests, one of which was celebrating his recent retirement. Emily, our server, escorted us to my favorite booth (#25) and immediately requested our drink selections. Our lunch requests followed with both of my friends ordering the French Dip sandwich, a favorite of mine. Both expressed how fabulously delicious the sandwiches were! We celebrated the retirement with a hot fudge sundae and 2 slices of key lime pie. During our lunch, a number of servers stopped by to personally greet me and welcome me back. Everything worked like clockwork and we left not only satisfied, but happy! Johnnie Ann, the maître d’, was delightful and charming, as always! Amanda went out of her way to thank us for coming and to let us know that she hoped to see us again soon. She could not have been more gracious and professional in all regards! Hillstone has become my favorite restaurant...and Amanda continues to make it so! ❤️More

We enjoyed our first visit to Hillstone on a Thursday evening. The restaurant was full and service was good. We started with sushi, flavor was great. Shared a salad and chicken sandwich, everything was excellent.

HILLSTONE (hh) lunch Brittany Took great care of us at lunchtime. Thai tuna roll, rotisserie chicken, cashew kale chicken salad, were all amazing. They have a big Place for a rotisserie chicken, and the artichoke look fantastic. The place was fantastic, a nice big bar...on the inside outdoor seating with fireplaces and the table and the blues on the inside of the restaurant hour great. I can’t wait to go back sometime for happy hour to sit out on the patio. I WOULD recommend.More

When we were there we dressed business casual but we saw jeans, short, suits so the simple answer is "anything goes"
