Hi,
I can try to help you as much as possible on this question. We try to make as much as possible here in the restaurant so if you were here we would be able to let you know what ingredients are in each item so that you could determine whether you would have an issue or not.
I can tell you that we don't add any soy products to our bread or to our chocolate (I'd like to be sure when you get here to ask if any of the base products we use to make the bread could have any traces of soy just to be sure but I don't think there should be an issue). Our own bean to bar chocolate does not contain any soy lecithin. However, we are only able to produce about 80% of our own chocolate for the desserts we make. We still buy chocolate coverture to cover the ganaches for the truffle and the glazes for the cakes. This coverture does contain some soy lecithin. We could advise you in which chocolates would be possible for you to eat, such as the 60 and 72% chocolate bars.
In summary, I guess what I mean to say is that yes, I believe that you could eat many things here with no problem. With a serious allergies though, I always like to go through each ingredient with the person, to make sure there would be no issue. I hope this helps and I hope to see you soon.
