Franklin Barbecue has become a staple for meat aficionados, with guests lauding the succulent briskity and flavorful pork ribs. Despite some reports of the brisket being occasionally dry, the quality of the BBQ is frequently deemed worth both the wait and the price. Patrons should be prepared for long lines, often exceeding two hours, but the attentive staff makes the wait more bearable with amenities like water and seating. The service at Franklin Barbecue is widely celebrated for its warmth and efficiency.

Rationalized waiting 90 min to get food in bulk, on a butcher paper tray, with Wonder Bread!!, and one register!, one meat cutter.. the process is crave worthy, we bought $56 of swag and $62 of brisket, pork spareribs, garlic and pepper pork sausage, and sliced turkey breast as succulent as any turkey you’ll ever have. Sides are a seeming afterthought. Too bad, I’d really like more sides to round out the meal. Amazing operation with five huge smokers in a 24 hr pit room out back. Fabulous experience for any bbq lover. If you’re off-season it’s worth the 90 min wait but go early, or go after 12:30pm... but don’t go any later. They sellout in 4 hrs!! Open 11am

Instead of waiting in line for hours, we preordered our BBQ 6 weeks (the maximum amount of time) prior to our trip to Austin. The downside of preordering is that we needed to order a minimum of 5 pounds, BUT it was so worth it!! I have been to Texas multiple times and this is hands down the best Texas barbecue I have ever had. The only thing I would do differently on my next visit is buy bottles of sauce to take home with me! The espresso BBQ sauce was especially fantastic. The pickup process was also easy and the restaurant staff could not have been nicer. I can’t wait to come back to Austin and have it again.

Went to Franklin BBQ for the first time to see what all the fuss is about. It’s super popular (major hype) so I stood in line for two plus hours, but was expecting it. I was at the end of the line so was served what was left (no choice but I liked the little bit of everything) which included sliced and chopped brisket, sausage, and sides. I asked for rolls and made some of the chopped brisket into a sandwich with their coleslaw, pickles, onions, and sauce. It was all quite yum. I especially liked the sliced brisket and really enjoyed the sides (which so many BBQ places mess up for some unknown reason). I was disappointed by their BBQ sauces, a bit too thin and not complex or rich in flavor. What I can’t quite understand is the level of mania surrounding the place. I’m a born and raised Texan and a huge BBQ fan and quite simply - I’ve eaten much better BBQ in Texas. Places with meat so perfect even the brisket fat is too delicious not to eat in excess (407 BBQ in Argyle I’m talking about you). Also for that long of a wait you can drive to The Salt Lick in Driftwood (30 min each way) which has great BBQ, a friendly warm atmosphere, in a picturesque setting with the pit inside which smells incredible. Franklin lacks on atmosphere. There’s also BBQ of the same caliber as Franklin right here in Austin but without the long wait. Yup, I just don’t get it. But I can say I went - which I have a suspicion is why many people go.

Hands down the best brisket I ever tasted anywhere.. Worth the 2 hour wait in line before it opened and I’m not one who usually waits in line for anything! It was actually fun talking with other bbq lovers! We came in from Chicago and met people who were on the same flight down. The staff was great even the meat cutter took time to ask us where we were from and very courteous as he kept slicing away. I was super impressed.

Well I can't critique the meat too much. Yes the brisket is awesome. Yes the ribs aren't that great. Mine had too much pepper. Apparently they can't get the rib situation figured out. Its cooked perfectly but the salt/pepper ratio is off and the reviews state as much. The pulled pork was delicious. But thats where the positives end. The girl/hostess in the parking lot did a great job managing the endless stream of cars and was nice. The people running back and forth delivering orders. Meh, kind of snotty. Asking me to get out of my car so you can put food in my car is pretty stupid. They're in kitchen, in close quarters with coworkers breathing and sweating all over each other. They can hand me my food and walk away. No different than them sticking their head in my car that I've been sitting in for an hour. Me getting out isn't going to save them from COVID. I'd argue them putting food in my car as being worse for them. Lastly, I had to order weeks in advance for my food. Not too much of an issue considering the health concerns and limited working staff. People have to adjust and I'm more than willing to adjust. However, when you make me pay a tip at checkout, weeks in advance, is complete and utter B. S. I'm all about tipping when I'm sitting at my table and you're waiting on me, filling my drink and bringing me extra napkins. But to walk my food to my car and that is the limit of your service on a $200 meal does not necessitate a 10% tip. What level of service did I get for $20 that I have to take home/hotel to eat. They walked 100 feet with a bag in their hand. At most $5-10 was appropriate. So on a typical lunch shift, they're making at least $100 an hour. I busted my ass daily for $30 an hour working 10 hour days for $300 risking life and limb. They work 3 hours and make the same. Complete Bull Crap!! Try other BBQ in Austin or the greater Austin area. They're as good as Franklin's.

Yesterday we visited the BBQ place out in Lexington and hate to say it didn’t live up to its hype, but today Franklin lived up to all its hype and more. Probably as enjoyable as the food was talking to all the people in line. Maybe our congressional leaders need to stand in line for 3 hours to eat BBQ...they might be less partisan. The only thing missing was the meat smoking experience...never saw where they smoked the meat. Would we go back? We’ll probably not, but we would recommend it to anyone.

You can now order online ahead of time stay in the car for pick up. It is very easy and convenient to do. I ordered 1lb each of brisket, ribs, and pulled pork with 2 pies that are bourbon banana and key lime. The BBQs are great but they are expensive comparing to other BBQs in the area. Although they are moist and flavorful but the pricing just a little too expensive. What I thought was worth the price are the pies, which are packed full of flavorful and true ingredients. The pie's size is enough for 2 people to share eating half each. I would get the pies again since they are good value for what you would get.

My Niece and Her Husband ordered Lunch 10 Days in advance and They were already Sold Out of certain Items We wanted. They Ordered Turkey which was as Dry as can be, the Brisket was Better than Terry Black's and Ribs, again I wanted Pulled Pork and They Out. How can You be out of Anything 10 Days in Advance. We Enjoyed the Sides, and the Desserts which for the Price should have been a Regular size Pie instead of a Bite of Pie. They forgot to put in One of the Desserts and actually brought it to the House. BBQ is so Expensive and You should expect Everything to Be of the Highest Quality and Size especially since We were in Texas. We have Better BBQ in Middle Tennessee. Glad I wasn't paying for it because I was Disappointed in it and would have been Pissed if I had.

We brought our overseas customers to Terry Blacks for lunch, as they had never had TX BBQ...the looks on their faces were priceless, as they were speechless. It was great enough that they went and bought a packaged Brisket to bring back with them to London...on our way out we stopped back by the smoke house and talked to the crew who showed them how it all works! Impressive crew there and highly recommend you try this great BBQ in Austin!

I had dreamed and planned on coming here for a very long time based on all I had seen and heard on the food network (watch their episode on the chef show for a look at their process). Only takeout during COVID, but on the good side you don’t have to wait in line for 4-hours. We ordered the day before online and were able to get everything but the ribs. The car pickup process is very COVID safe - it does take about 30 mins but the food is packed well abd is steaming hot and fresh. In the end, the brisket is the far and away star of the show. It is so ridiculously moist and flavorful, I’m sure it will never be matched. It’s worth the whole trip. The Turkey was pretty boring actually. The links were solid. The shredded beef in espresso sauce is super rich and delicious. I wish they didn’t make you order 3 lbs minimum but I get the tough economics around COVID takeout. Be prepared for a very hefty bill, but can you put a price on the best brisket you’ll ever have?

Franklin’s opens at 11am. I heard there could be a long line. I showed up at 9:50am and the line was long. They said where I was in line it would be a 1/1:30pm eating time and they ran out of ribs before they even opened at 11am....Everyone in the line was basically from out of town...This place is a tourist trap. No BBQ is worth waiting that long for it. What a gimmick.

The Franklin reputation had kept us away because we didn't want to wait in the ridiculously long line. Maybe the pandemic was the best thing to bring Franklin BBQ to the masses. We ordered on a Wednesday to pick up on 10:30 am Tuesday of the next week. Arrived at 10:06 and I was the second car, the meats went in the truck at 10:25 and we were chowing down by 10:35. This should be the only way to get Franklin from now on. The meat was done to perfection, tender brisket and ribs that falls off bone, snappy sausage. I only gave it four stars because the flavor was a bit too salty for me. But it wouldn't keep me from having it again.

With COVID restrictions, must pre-order at least two days in advance, with minimum of 3 lbs. The briskets are the best, must try. If doing it again, will definitely order briskets alone. The pork ribs were a bit salty. The sausages were average. Didn't try turkey. The beef ribs are not available. The order comes with white breads, 3-4 different types of sauces, and pickle/onion side dish. The ordering process from its website and curbside pickup process were all very efficient. When ordering, they don't accept fraction of pounds, for example, 1.5lbs will be automatically round up to 2lbs. The staff are friendly. Worth trying once, the pre-order and curbside pickup makes things easy. Not sure if want to wait in the line like most people did before COVID.

We got BBQ here because a local friend said it’s “the best BBQ he’s ever had.” I guess he hasn’t had great BBQ. I would put Franklin BBQ squarely in the “average” category. The brisket was moist and quite good. I’m not a sausage fan, but hubby said it was good. The pulled pork was dry, very dry. The potato salad is disgusting! It might be a local tradition to put mustard in potato salad or something because this is the second time I’ve gotten it like that from a bbq joint, but I don’t care for mustard and that is ALL this potato salad tasted like. Yuck! The slaw was fine ... fresh and crispy, but really no taste to speak of. I think it was just cabbage, mayo and pepper. Hubby is a chili fan, so he ordered a quart of the non-bean chili, which looked like it was ground beef in sauce. He paid $20 for that quart of chili and said it was NOT worth it. We had to buy by the pound (!) so ended up with almost all of the dry pulled pork, so-so slaw, disgusting potato salad and the chili left over. This all cost us $100!! For $100, I expect my BBQ to be moist perfection and the sides to be flavorful. As a matter of fact, I had given this place a 3, but after reading my own review, it only deserves a 2!

Eating at Franklin's was my main motivation in visiting Austin. Franklin's was on my restaurant bucket list, the Mecca of BBQ if you will. What better time to visit then when you don't have to make the line due to the COVID(though that may have been fun too). Truth be told, I had placed my order before I bought my plane tickets. When ordering proteins it would have been nice to have just a "yes" button instead of clicking each one. I ordered the brisket, ribs, pulled pork, sausage, smoked turkey, and the chopped beef which, just in case you missed it, is all the proteins they offer. Mind you this was for 2 people. My excitement builded as we neared and smoky scents started to become noticeable. When the staff approached the car I was down right giddy exclaiming "I will be the most excited guest you have today". Such a nerd. Alright enough already, on to the food. The brisket is life changing, if there is better, I have yet to have it. Definitely worth the plane ticket. More moist and buttery than I have ever had before, the end piece was earth shattering. The ribs are fabulous. The chopped beef and sausages are definitely worth ordering. I could have done without the turkey but it was great to dip in their espresso bbq sauce, something I wouldn't dare do with the ribs or brisket. The pulled pork was good but I've had better in NC and TN. The potato salad and coleslaw were mediocre and really only necessary to break up the richness of the meats. The service was great albeit brief and curbside. Hope to return someday soon. Thank you Franklins for delivering on the hype and my lofty expectations. I'll never forget the experience and haunting flavors.
