In August 2011 we were traveling from NorCal to BC and needed to stop for gas in Ashland. After fueling the vehicle we decided to seek some good coffee and asked a local for a referral. Noble Coffee burns and over-roasts their beans. Their beans are particularly unpleasant as a drip coffee. A number of restaurants in Ashland use Noble coffee for their house coffee (for reasons that many of us locals can't fathom) so try the coffee first before you order it. You may want to avoid ordering the coffee at those restaurants.

Love this coffee house! The coffee is excellent as is the service! The coffee grounds are smooth, yet rich. Nice atmosphere!

asked for a little more milk in my to go cappuccino. was told it would have to be cold milk, because that is their recipe. What? I would like a little more hot milk.. that will be .50. I can make you a latte. You can make me a latte for free but you are charging me .50 more on... More

The store has a pleasant ambience and is located in a nice, up and coming area near the center of Ashland. The barista was friendly and personable but the coffee (Kenya and a latte) were quite unmemorable and definitely not worth the exorbitant price. Hard to believe but Starbucks offers better value for money!

Forget all the other coffee houses in Ashland. Hands down, the best drip coffee and the finest baristas.

So very many Ashland businesses and people swear by this coffee, and I understand why. It really is superior stuff. This place epitomizes the whole gourmet coffee idea, and they never lose sight of why they are in business: great coffee. Add to that an excellent cafe, and you have a winner. Be quick though! We really enjoyed our visit and hand made espresso hot drinks on this railroad district landmark. The sun shone through the windows to add brightness to our stop for a nice time-out

This place really lives up to it's name, which isn't entirely a good thing. The coffee is primo for sure but the overall feel of the place was not very welcoming. Ashland is a tourist town. Noble coffee needs to be a little less noble and more visitor friendly.

To be honest, my taste buds aren't that refined , especially when it comes to coffee. However, the coffees at Noble are my favorites. I know some people rave about starbuck's, but, their selections always taste a little bitter to me. On contrast, Noble's taste mild, but, with great flavor.
