We are proud to introduce the brand new venue Aubergine49 to Hoi An. Local son and chef Nguyen Nhu Thinh has spent 10 years abroad training with leading chefs such as Paul Gayler, Rick Stein and Seiji Yamamoto of Tokyo's Nihonryori Ryugin (a three Michelin starred restaurant). He has now returned home to create a fresh new venue with global flavours. Classically trained, the style of Chef Thinh's dishes combines classic French techniques with global flavours to create a modern contemporary menu of Eurasian cuisine firmly rooted in an Asian background.

Fine dining at Aubergine49

Aubergine49 is a fine dining restaurant outside of the ancient town so take a taxi. It’s a lovely renovated space inside, and the service from the staff was excellent. The presentation of the food is beautiful but we found that the flavours of some dishes was excellent and others were perhaps over complicated and didn’t work as well. Definitely better for couples than families. It was still a lovely evening. Recommend the mushroom risotto if you like rich food, and the chocolate mouse. Cost for 4 mains, 4 desserts, 1 wine and water was about 3,000,000 VND. There is also a set 3 course menu for about 780,000 each.

Italian fine dining in Hoi An

The 3 of us ordered set dinners and drinks. The food was great. I had the char-grilled beef medallion for starter. It was perfectly done. The serving was about half that of a main course. My smoked duck breast main course was perfectly cooked and paired with sauces. The banoffee pie is a nice combination of textures and tastes to finish off a meal. However, the standard of service should be better for a fine dining restaurant at this price point. For example, the service staff had to asked us what we ordered when food arrived. We also observed guests at another table being served bread only when the main course arrived. They declined the bread.

Simply the Best

Whilst in Hoi An, we made a reservation at Aubergine49 being recommended it by a friend. WOW! We arrived in our Grab and was met by a friendly member of staff who stopped traffic so we could cross the road. We were then seated and shown the menu. We chose the 9 course taster menu with the paired wines to drink. This was more than just a meal, it was an experience, and an amazing one at that. Every course was unbelievable and the attention to detail impeccable. I cannot give it enough praise. All of the staff were friendly, polite and helpful and a credit to the restaurant. If you come to Hoi An and want something special, make a reservation here and be prepared to be wowed. It really was an evening the wife and I will never forget.

Don’t waste your money on this restaurant

We had a party of 8 and were looking forward to a memorable Christmas Eve Dinner in Vietnam. To say we were disappointed is an understatement. The dinner took over 4 hours with long wait time in between courses. We could tell other tables around us were getting frustrated waiting for their food as well, one table only got their drinks and left without eating. For the price point, I expected excellent service. Had to ask for water multiple times, didn’t check on the table to see if we needed more drinks, etc. Now for the food…some dishes were ok and other dishes were not good at all. One of my course was a grouper fish. The meat was so tough and had no flavor at all. I had one bite and couldn’t eat it. They asked if I wanted something else but at that point, it was over 3 hours into dinner and I didn’t want to wait any longer. They didn’t offer to take that course off the bill. We spent over $1000 US dollars and I would’ve been happier eating a bowl of pho instead.

Dear Vacationer318130, Thank you for choosing to dine with us for the Christmas Eve celebration. We appreciate your feedback and are sorry to hear that you did not have a memorable time with us. However, we would like to clarify what happened on Christmas Eve. We apologise for the wait on the night you dined with us. Your party of eight had made a reservation at 7 pm, and you arrived twenty minutes early. At this point, other guests who had made reservations from 6 pm to 7 pm had also arrived on time. The restaurant was very busy at this time, and we politely asked all guests for their kindness and patience as we tried our best to accommodate everyone. Our priority was to serve everyone who had arrived on time for their reservation first, but without neglecting other guests. We apologise if our service did not meet your expectations. As for the food, your party ordered five Seven-Course meals and five sets of Three-Course meals. The seven-course meal typically takes two and a half to three hours, including wine pairing. The duration also depends on how fast our guests prefer to enjoy their meal and the group size. After receiving your party orders, the first course was served. We received a request from your party to finish the meal by 9 pm, which was almost impossible for us to fulfil your wish due to the size of your group and the busy night. Some members of your party had the seven-course meal with wine pairing, while others ordered the three-course meal. This meant the waiting time for your main course could be considerable. Regarding the grouper dish that you mentioned, it has been on our menu for a long time, and it is a popular dish with many of our guests. We are committed to serving wild-caught fish. The texture of the grouper fish can be firm due to its habitat; it can be misunderstood as tough meat. However, we did offer to replace it with the Red Snapper dish from the seven-course meal, which you were happy with. We apologise for the fish not meeting your expectations. We would also like to address your comment about the guests who left without eating. They were a party of two who requested a reservation for Christmas Eve with us in early November. When we asked for a deposit, we did not receive a reply until the day before Christmas Eve, when they called to confirm their reservation. At this point, we were fully booked and stressed that waiting was expected on a busy night, and we could only accommodate their reservation until late. They proceeded with their reservation but were unfortunately not patient with us on the night. Once again, please accept our apologies. We hope our explanation has given you a better understanding of what we are trying to do here at Aubergine49. Your feedback will help us improve our service, and we would love to invite you back in the near future to provide you with the excellent service we know we can deliver. Hidden Gem of French Fusion in Hoi An!

We had a wonderful dinner at Aubergine49 this week. The restaurant is a 5 min drive outside of the main Hoi An old town so you’ll need a taxi to get there, but the experience was worth the trip! The staff were attentive, polite and friendly - and the food was amazing! We loved the French fusion dishes on the menu. The snapper and the duck breast were excellent and the presentation was superb.

Best meal we had in Vietnam

This restaurant was simply amazing. We loved it. Very high quality food, beautifully prepared, served with great wine. There was nothing to fault. It was a bit pricey for the area, (but cheaper than London, where I live). Frankly, this one is worth the visit. :)

Fine French inspired Cuisine for a Special Occasion

We wanted a change from dining at the hotel and also wanted something more special than the local restaurants of downtown Hoi An. This is upscale French restaurant was excellent. There is a prix fixe that is reasonable at $40.00 for 3 courses. We had very good wines by the glass but splurged on a $70.00/ bottle. The staff were attentive and helpful. The room was small but comfortable but you could also sit outside with a powerful fan. I recommend this for a special occasion and if you are looking for classic European cuisine with Viet accents.

The only gastronomic one in Hoi An. The cooking is perfect, the staff attentive and the culinary inspirations impressive and delicious. For people like us who want to discover this perfect fusion of European specialties in a very pleasant place, this is the perfect opportunity. The prices are largely justified, the products are fresh and the presentation is impeccable. Very good time spent at Aubergine49. The only gourmet in Hoi An. The cooking is perfect, the staff neat and the culinary inspirations impressive and delicious. For Europeans who like us want to discover this perfect fusion in a very pleasant place, this is the perfect opportunity. Fantastic evening with delicious food and marvellous staff

We recently visited this restaurant for our Christmas dinner and were very impressed. The staff were incredibly welcoming and charming from the moment we arrived. The service was excellent, with all the waiters and waitresses being attentive and thoughtful. The food was simply excellent. We have never had a better combination of food and wine. We highly recommend this place if you want a delicious dinner and a wonderful time with great company. Be sure to check it out when you're in town!

Very nice gastronomic discovery! In a very elegant setting, we had dinner one Vietnamese winter evening. We took the 3-table menu and we loved the beautiful work that combines European cuisine with Vietnamese flavors! Elegant, delicious, sought-after! Surprise surprise. The food and the whole experience was excellent. This chef has worked fir Michelin star restaurants. Having experienced many of those I can surely say, this restaurant chef deserves to be on the Michelin list. Wonderful.

Exceptional five star French cuisine

We went here for our wedding anniversary dinner. Food and service were exceptional. All meals are set meals 3, 7 or 9 course with excellent wine pairings. Cocktails were excellent too. 5 star service from waitstaff. If you are looking for an elegant dining experience for a special Occassion this is the place to go in Hoi an

Outstanding restaurant. Choice of 3,7,9 course prix fixed menu. We had 3 courses which was more than enough food for us. Presentation stunning and exceptional service. First course we had scallops which was incredible as well as artichoke which was delicious. 2nd course, we had short ribs and fish. Both presented beautifully and extremely tasty. Dessert, we had chocolate molten cake and I substituted sorbet. Both nice.

When we thought that nothing could match the Temple Restaurant, we found this one. Perhaps not quite as nice interiour, but the service level and food was of top quality. Exquisite food! Highly recommendable for fine dining.
