Shibumi Sushi Bar

About
Shibumi is a pioneer in Ecuadorian dining that introduces local and seasonal ingredients found nowhere else in the world, while reinventing the most classic forms of Japanese cuisine. The menu changes daily based on the market's finds, and the beer selection rotates weekly to highlight our latest discoveries. We base our experiments on the most demanding foundation of technique, quality, and simplicity, using Japanese traditions as a primary point of reference. The process of sushi allows us to combine flavors in inventive ways. The philosophy of omakase, which invites guests to eat the Chef's selections, allows our patrons to join us on a new level of experience, as both participants in discovery

very special and delicate taste. The menu where you can ask for whatever the chef is serving until you are full is my favorite because you try different things you wouldn't normally order

Visited Shibumi for dinner with my girlfriend. We had the Tuna, Milan and Scandinavia Maki rolls, which were all delicious. Staff were really friendly. Highly recommend.

This is a 8 table restaurant that serves fresh as it gets sushi. The bar is open and the setting is perfect. The service is kind and helpful. Make a reservation, it fills up quick.

Most of the Sushi in Quito is loaded with ingredients, Californian or Peruvian-style. Very little actual Japanese sushi to be found—except in Shibumi. Many of the sparingly used (like it should be!) ingredients are, however, local and inventive. This is what makes Shibumi special.

Me and my wife came here as we saw that TripAdvisor had them listed as #4 at the time. We went for our #4 Anniversary. The place is small in size but gigantic in what they offer to the customers. We asked for the chef...More

Remarkable sushi bar in Quito. This place would hold its own in London, New York or even Tokyo. Compared to the other Ecuadorean restaurants I have rated 5, this would be an 8 - fantastic fish, FANTASTIC fish. The only negative is that they come...More

Fresh as can be; this may be the best sushi you will ever enjoy. The omakase tasting route was fun, with stunning presentations. Each item was proudly and dutifully described by the chef. The Shibumi Salad is a must have starter.

I love sushi and had it all around the world. I surely didn't expect a restaurant in Quito to be this good. The fish is super fresh, both taste and texture are very good. Presented well. Excellent service. We ate a ton of food (2...More

Some of the beat sushi I’ve ever had. Recommend the Shibumi roll (we had 2). Good list of wines from Chile. Their sparkling Rose was great. Recommend making reservations - not many seats in this house! Great service and everything was reasonably priced. Extremely fresh...More

When the four of us arrived, we decided to just put ourselves in the chefs hands and let him select what we should have. It was one of our top sushi experiences and I have been eating sushi for 45 years. 2 of us had...More
