About
Shibumi is a pioneer in Ecuadorian dining that introduces local and seasonal ingredients found nowhere else in the world, while reinventing the most classic forms of Japanese cuisine. The menu changes daily based on the market's finds, and the beer selection rotates weekly to highlight our latest discoveries. We base our experiments on the most demanding foundation of technique, quality, and simplicity, using Japanese traditions as a primary point of reference. The process of sushi allows us to combine flavors in inventive ways. The philosophy of omakase, which invites guests to eat the Chef's selections, allows our patrons to join us on a new level of experience, as both participants in discovery

If you want to be in a restaurant where the chef does not see what he does as a job but really loves preparing your food in the best possible way, then go to Shibumi. You will notice the difference

My boyfriend and I spent a month in South America (Ecuador, Galapagos, & Peru). Our meal at Shibumi was hands-down the best meal we had on the trip, and one of our most memorable experiences. We let the chef decide which rolls to make and...More

Tried several of their unique sushi’s and they all tasted amazing. Would recommend nigiri with brandy-teryaki and coffee beans. Would definately recommend going here for a proper NON-all-you-can-eat sushi experience. Staff was super friendly too!

Adding local tastes to traditional sushi was very interesting and tasty. Not all combinations worked for us, but it was very interesting to try. I especially loved the Nigouri with salmon, brandy and coffee nibs, as well as the seared tuna with shallots, and whitefish...More

Most of the sushi in Quito is tempurized or smothered in cream cheese. Not Shibumi. Everything is prepared with such care and attention to detail, and though not traditional Japanese (the chef showcases local ingredients in his dishes) they are certainly special. We did the...More

We booked on a private dining with 10 guests, selected the "Omakase" style of menu with highest expectation. But frankly speak it isn't the authentic Japanese Cuisine that Asian used to be, very creative by integrating with local resources like coca into sushi and so...More
