This auberge shows off the regional cuisine quite wonderfully. Starting with tiny slices of saucisson, local cheese and a very gutsy tapenade accompanied by the crustiest crispest croutons, followed by local charcuterie and then the local culinary glory Aubrac beef with the most famous potato...dish of the region, aligot. Aligot is made with tomme de Cantal cheese and potatoes and at the Auberge the recipe is followed closely. The cheeses to follow are very local indeed, from very individual cheesemakers- don't expect anything you've ever heard of before-sheep, goat snd cows milk cheeses. The puddings made a welcome change and my myrtille (wild bilberry) ice cream was fabulous. This menu is not for the faint hearted. Its just fabulous localfood from a young ambitious hard working couple. It was a great evening.More
