In my career, I have enjoyed dining at a high level in the States in places like Miami, Chicago, Seattle and New York City. 10 Dieci was incredibly unique among these experiences. The intimacy cannot be overstated- you are among nine other diners in a landscape apart from the world, on top of the world. The views from the grounds are breathtaking. Indeed, it is remote, and the closest city with hotels to accommodate you is 40 minutes away by car. I was fortunate in finding a cheerful bed and breakfast run by friends of Dieci's owner much closer by, and, as a wonderful bonus, the owner of this BnB shuttled my friend and me to and from the restaurant. For reference, Michelin has particular standards when it comes to the stars they bestow on worthy establishments. One star: A very good restaurant in its category. Two stars: Excellent cooking, worth a detour. Three stars: Exceptional cuisine, worth a special journey. This restaurant is worth every bit of three stars Michelin- I do not regret at all my two hour journey from Plovdiv Bulgaria to dine here. The Chef Gianfranco is a force with which to be reckoned, as is his wife Anna, who is at once a beacon of high standards and a warm and welcoming presence as you arrive. An 11 course tasting menu, there was thankfully an intermission in which we were able to converse with Gianfranco and Anna and let our tastebuds rest for the final half of the meal. The wines on offer were each excellent, many offered by the glass to help showcase the varied pairings possible. All ingredients in the menu are locally sourced save olive oil from Greece. Honey is from hives harvested on property, the venison in two courses was bow-hunted from the chef himself in adjacent land, all fermentations were controlled and completed on-site, and all herbs and microgreens culled from the property garden to which they tend. The Michelin Meal Amuse Bouche pork preserved in its own fat, scented with star anise in a whole wheat cone sweetened with local honey and colored with pulverized vegetable charcoal Course 1 “Mare e Monte” Spicy Buerre Conkit Kavarna Mussels, Olive Oil infused with fresh dill from the garden, Venison Carpaccio, Jujube Mayonnaise Course 2 “Sottaceto, Stagionato ed Affumicato” Sweet pickled radish, truffles and lavender Sirene, smoked honey Course 3 “Classico Pâté de Dieci” Pâté de Campagne (duck and pork), Porcini Dust, Orange Marmalade, Local Wine ‘Melnik’ Balsamico Gelée Course 4 “Sapori Artigianale” Lacto-fermented Chanterelle, Roasted Carrot, fermented Black Garlic, Rosehip tapenade Course 5 “Tikva Cappellaccio” Pumpkin mousse, Venison Ragu, Duck Demi glacé, Sage Course 6 “Il Risotto d’Oro” Yambol Saffron, Pistachio, Duck Cracklings, 24K Gold Course 7 “Poesia Della Cipolla” Caremelized Shallots, Belishki Onion Cream, Liquorice Dust Course 8 “L’Anatra” Duck Magret, Apricot Gelée, Ashed Potato, Beetroot & Celeriac Caramel Course 9 “Pre-Dessert” Devino’s 288hrs Fermented Wild Apple, Local Wine ‘Melnik Rosé’ Balsamico Gelée, Kazanluk Roses, Rhodope Sheep Chantilly Cream Course 10 “Main Dessert” Rakia Zabaione, Pistachio, Green Pepper Ice Cream

We were a party of 4, with luck we were able to book a dinner about a week out because of a cancellation. We didn't know what to expect and were completely wowed by the experience! Located on a beautiful property inside a former renovated school - Gianfranco and Anne put out a real performance. The level of service was unmatched, the dishes were all mouth-watering and the ambiance was just perfect. The chef was very accommodating to our groups dietary restrictions and altered their set menu for some members of our group. We also really enjoyed the wine pairings and ever grabbed some of the wine to enjoy later on our trip. But the absolute best part about this experience was the level of intimacy Gianfrance and Anne create - it felt like we were visiting old friends. They were very attentive, we had many conversations on topics ranging from cuisine to travels to Bulgarian life and others. Their personalities are the best part of this restaurant and we can't wait to be back to other season's menu! Honestly, the highlight of our trip to Bulgaria!!!

Our food for love brought us to this small village and Anna and Gianfranco. We were so lucky to have a reservation. Since the moment we've arrived, our not visit, but an adventure began. The old school is renovated with such taste and simplicity, yet you can sense Anna and Gianfranco's souls, energy and love all around you through the pictures and all small details. Then the food adventure begins. And you totally dive into this world of taste, harmony, texture, color, smell and music that Gianfranco creates. He sure does not create food. He creates magic which enchants. An amazing thing is that he uses Bulgarian products and his interpretations of some of our favourite Bulgarian dishes. The most impressive for me was his mousses - such elegance in taste and texture. Imagine the best Bulgarian tomato - sweet, juicy, a little bit sour. And now imagine a mousse that extracts all of these and compress it into a small bite - outstanding. I can describe all of the dishes and how they make me feel, but tasting it by yourself will be best. Anna will accompany you through this journey with fines and the best Bulgarian wines. Her eloquence and mastery of paring wines is outrageous! Visiting this restaurant is a must! They don't serve you just the best dishes, they give you an answer to the question "Why" they do it with every detail. Thank you for having us! Hope to see you in October!

Me and some friends had the incredible pleasure and opportunity to book a table at Dieci Boutique Restaurant. I have to admit that it is a unique concept, first of a kind in Bulgaria. After all, how on earth an Italian chef of this caliber ends up in a little forgotten village in the Targovishte region of Bulgaria, buys a 100 year old school and manages to make a restaurant of this caliber of cuisine, service and quality. Moreover chef Gianfranco and Anna Chiarini manage to make this restaurant viral and manage to make people from all over the world travel and visit. Our experience has been unique, the decor is elegant but not pretentious, one feels comfortable and cozy, but yet there are etiquette rules to adhere to. The service and sommelier skills of Anna Chiarini are to the next level, the elusive wines of Dieci Boutique Restaurant are of the highest quality and a great variety that definitely pairs excellent with the 10 course menu of Dieci. I loved the menu in its entirety, but some dishes resonated to me in a special way, for example the Four Seasons of Kashkaval and excellent execution of a variety of angles and flavor profiles from one single Bulgarian product really impressed me. Another dish that is really impressive is the Honeycomb shaped Panna Cotta that as explained by the chefs is the maceration of local apples with local honey for 10 days, blended with smoked pork from local farmers and all transformed into a delicate and creamy piece of art, paired with Foie Gras sand and aged Dzhanka Rakia creamy Veloute. The Roasted Guinea Fowl ballotine with the Smoked Apricot BBQ was an outstanding demonstration of how to transform local humble products into elegant and delicious pieces of art, but yet with our childhood flavors in mind. Something definitely new in Bulgaria. I have lived in Austria and traveled all Western Europe and have eaten in several Michelin starred restaurants. All very good, but now I am very proud to see and to say that we have achieved the same level of competitive quality through Dieci Boutique Restaurant. I definitely give a 5 star rating to this great place hoping that anyone reading this review will have the same pleasure and experience I had. Dieci Boutique Restaurant is highly recommended. This is my 2nd time to dine at Dieci. It just keeps getting better and better. The service the quality of the dishes along with the chef is world class and the location is breathtaking. If any restaurant deserves a Michelin Star, is has to be DIECI. A must try if you are visiting Bulgaria.

It has been a very pleasant experience to visit such high-quality restaurant in Bulgaria! Its location is very unusual, but it has its own beauty - surrounded by nature, it involves plenty of history, memories and pleasure. The food was extraordinary - traditional dishes presented in such untraditional but very fascinating way. I believe that this is the first place in the country that deserves a Micheline Star as it is not only a “dinner”, it’s a whole experience. Gianfranco and Anna are very welcoming and put so much energy, passion and love in everything they do that they made us feel not like ordinary customers but like their guest in the place where they live. I’m looking forward to trying the Autumn menu as it sounds as incredible as I’m sure it will taste.

I have come across this place through a local newspaper article and was impressed that something like this may exist in Bulgaria. Until the very moment, I was somewhat skeptical and was not expecting this of a high-end experience. Beautiful scenic place, amazing food, completely different level of accommodation. Gianfranco and Anne made 6 hours pass like minutes. The level of service was exceptional, the dishes were a form of art themselves. The chef has even altered the set menu to vegetarian preferences for my girlfriend and me. The absolute best part about this experience was the atmosphere and the stories by Gianfranco. It felt like we were visiting our best friends. There is no way to express how much we have enjoyed those conversations. Recommending this place to everyone and am proud that Bulgaria is turning into a country where something like this may exist.

I will take this opportunity to share my experience at Dieci Boutique Restaurant. I had the opportunity to be trained by Chef Gianfranco Chiarini and Chef Anna Chiarini. The training was for a full period of three months. There I learned not only how to work on myself professionally, but more importantly the importance to love the work one does. I’ve been taught to put effort and passion in everything I do and at the same time, to do it with uncompromising quality and attitude towards the food that is created. I’ve been taught to value our profession, to respect the work of others around me and to put myself in their place in difficult situations. (Teamwork) I’ve learnt that the restaurant business is a team game, and that as part of the team one must always respect the work of the people around us and help them when in need. The goal is not to push ourselves forward only but moreover, the goal is for the whole team to move forward, as one. Chef Chiarini helped me to be a better person, criticized my mistakes until I stopped repeating them, always showed the right attitude and made me feel like a part of the team. He was strict at all times but always fair with me. What I can say about the restaurant is the following: In Bulgaria, until now, there has not been a restaurant of such standards, integrity and skills, which offers such a high level of service and food. Dieci makes its guests feel like they are at home. The atmosphere is extraordinary and predisposes the guests to feel good, to enjoy the food and the service, and also gives the opportunity to have direct and undivided contact with Chef Gianfranco and Anna Chiarini, which is a rare opportunity in restaurants of this level. The Chefs share their life experiences and global stories with their restaurant guests. I am grateful for everything I’ve learnt and I hope to have the opportunity to be in this place again next year. Chef Chiarini, thank you for your help and support! You have helped at the right time in my life, and most importantly, with all your heart and dedication. Your help has been invaluable. Thank you for your support, attitude and the priceless skills I’ve acquired and I look forward to the near future!

I visited Dieci last night with my son Theo and my good friend Tania. After we left, we just sat in silence, each of us contemplating what we have just experienced. Later Tania said to me “Words are only spoiling the way I feel. I don’t even want to try to describe it to people, I just want to remember it again and again.” I will try to describe it though, to give justice to chefs Anna and Gianfranco’s work. The whole experience was multi layered - the culinary part being just one of the layers. It was fun to watch the other guests, strangers who we met that night, and as they were sampling the dishes, on their faces I could see the same emotions of surprise and delight I was going through myself. I felt there was a deep though behind the way the dishes were created and presented. Tradition was combined with modern esthetics. The chef made a big deal of welcoming us with homemade bread and butter - what could be more Bulgarian than that! The bread though - enriched with the colors, textures and flavors of beetroot, figs, pecans, and topped with orange and truffle butter, was speaking of cosmopolitanism. I have to mention how balanced the whole meal was. After all the various ingredients, flavors and combinations, I felt as my body is fully charged, without making the slightest effort to digest and absorb. Balance was everywhere around us that night. The interior was elegant and simplistic at the same time. The attention from both chefs during service was enough, yet not overtaking. I love the way Gianfranco is working with the historical heritage he has found in his new home. He is aiming at enhancing it and make it visible for everyone. The way both chefs prize and promote the local peppers, rose water or melnishka loza make me feel proud to be Bulgarian. We came to Dieci as welcomed guests, and we left as friends. My 18y old son, who is born outside Bulgaria, was bouncing with excitement, well reconnected to his roots. A huge Thank You to these two wonderful foreign people, who take pride of where they are and what they do, and make this beautiful part of Bulgaria even more exciting.

It was such an amazing experience for all 4 of us! A complete 5 hours journey brought us to a different world where food, senses and new perspectives meet. It was so different and unique. The company of the chefs was also so pleasant. With all the fun stories we've heard the time past so fast. Now about the food....WOW! Just WOW! Can not be compared to anything we've had in any other restaurant in Bulgaria (even abroad). All dishes were prepared so precisely, served and presented so well that we were able to feel the food, not just eat it. The restaurant is based in old school building and has a great yard outside. Wonderful view to the mountains and the smell of the natural herbs around present so well Bulgaria! Thank you for choosing this exact place. It is so magical that i want to visit it again and again. We recommend this place 100% (even that we are overprotective and want to keep it for us only:) ~ to our new friends Anne and Gianfranco... thank you for your dreams! It all started with my search for a birthday gift for my husband's 50th anniversary. I wanted to give him an experience that he'll never forget. Then I remembered of Dieci. Researching I read they are doing these pop-up dinners at Villa Melnik, known with its fine wines. I knew the dinners only accommodate 10 people, so I booked it in a heart beat. And it was the best decision ever! The explosion of exquisite tastes, aromas, colors, the personal attention, the privilege to share this amazing dinner in this beautiful setting made it a night to remember forever! If Chef Gianfranco Chiarini were an opera composer, he would surely be Richard Wagner – an evening at his recently opened restaurant Dieci is not just a dinner. It is a Gesamtkunstwerk, a treat for all senses. The first thing that amazes when you reach Dieci is the setting – spectacular views of mountains in the distance, soothing green lawn around the house. Anna and Gianfranco meet the guests, show them round the grounds and explain with enthusiasm how this project was born and came to fruition. They transformed the former village school into their home and restaurant lovingly, with respect for the original structure and materials. The restaurant is on the ground floor. The setting is elegant and unobtrusive, leaving the spotlight for the star of the evening – the food. And what food it is! When we visited, Chef Chiarini and Anna served their Creative 10-Course Opening Tasting Menu. They take turns in presenting each dish, explaining the ingredients and the steps in the preparation. All stages of the culinary journey were amazing – from the bread with sage butter and sweet pea amuse-bouche through the polenta gnocchi with Gianfranco’s take on Bulgarian lutenitsa to the red pepper ice-cream, deconstructed banitsa and chocolate boza. I highly recommend this place to anyone who seeks a wholesome culinary adventure. And of course, I’d love to be back for another seasonal menu!

I am so excited and honored I had the opportunity to see the beauty of this magical place, taste the unique cuisine paired with the outstanding wines of Villa Melnik, enjoy the impeccable service and gracious hospitality, and spent precious moments with the powerful yet humble team of Gianfranco and Anna. The drive, vision, creativity, and culinary talents of Chef Gianfranco are truly inspiring. Every single plate is artfully presented and prepared with fresh local seasonal ingredients supporting the local economy. I am in awe of the boldness, courage and the entrepreneurship! I came as a stranger, and left as a friend who is now a true fan and ambassador for Dieci restaurant for years to come. Make the trip, come and discover this true gem! My second visit @ Dieci was honestly even more exciting than the first one. The whole team enjoyed the food, the wine and the whole atmosphere that chefs Anna & Gianfranco created. I am loving it! Definitely recommending DIECI for those who know about good food, great wine and hospitality. The perfection, knowledge and attitude that stands behind each of every one of all 10 dishes served means respect to us, the guests of Dieci, as well us respect to themselves as professionals.

Must do experience if in Bulgaria! The chefs have put a lot of thought in each and every detail… from the dishes’ ingredients to the presentation, wine pairing and of course, customer service, something sadly Bulgarians are lacking. We had the summer tasting menu, 10 courses with suitable wines and were amazed. Totally worth the 3hr drive from Varna and back. I work in fitness for a living and am very cautious of my food intake. However, miraculously I did not feel heavy last night nor this morning. The ingredients were local and, as a Bulgarian who has been living abroad for 20yrs I embarked on a journey back to my childhood, mixed with my year of living in Italy. When food tells a story, it deserves an excellent feedback. Thank you, guys!
