When we got to Acqui Terme late Wednesday afternoon, and after checking into our hotel, we went out for a drink. I asked the bar owner where he would go for dinner if he went out and he suggested Nuovo Parisio. It was closed but...we went the following night. It was an excellent suggestion. We began with asparagus flan and stuffed peppers. Nicolo, the young chef, presented the peppers in a way we'd never seen (since coming home we've copied his idea with great success), ravioli with meat sauce and light elegant cannelloni. We drank a very good white Arneis and an excellent Barbera di Asti. A bowl of fresh strawberries and a sablione with chocolate sauce rounded off a delicious dinner. By the time we left the restaurant was full. Lots of laughter, lots of oohing and aahing when the meals were served, the service was impeccable. Flavio, the head waiter and his colleague, kept everything under control. The young chef/owner, fourth generation, is to be commended. He is running an excellent restaurant. Whitebeard83More
