We are very active world travelers. I don't mean we go on vacation few times a year. I mean we have lived at least past 10 years of our life literally hopping the world every month. Being very private people, we don't do any posts...on any social media and don't write any reviews. We are very actively browsing TripAdvisor any time we are looking for some particular info, but almost never post. Given the current situation in the world, I feel compelled to write this review as our hearts bleed for all the wonderful people in businesses that are suffering because of the pandemic. Being very picky foodies, we enjoy fine dining. We have accumulated an enormous collection of experiences through those years in many 1, 2 and 3-Michelin stars restaurants. Some of them became our favorites that we keep coming back again, like in Paris and NYC. Some fall into "just once was enough" category. But when my husband asked me in January this year - where do you want you big-birthday dinner, I did not hesitate - De Silveren Spiegel. And this is why this review is long overdue. We "discovered" this place about 4-5 years ago and since then we have been coming back many times throughout every year. And every single time the experience was just that - PERFECT. Not an easy thing to achieve. Trust me, we have seen rises and declines, hits and misses in places like Epicure, LeCinq and Alain Ducasse in Paris, Eleven Madison, Per Se and Le Bernardin in NYC, La Pergola in Rome, Atelier in Munich, etc., just to name a few. Still blows my mind how De Silveren Spiegel does not have Michelin stars. Granted, it's not as "grand" as some of those other venues. But it does not have to be. There are so many factors that play into that elusive "perfect experience" and aside being "not gold-gilded grand", Silveren Spiegel easily surpasses all those 2-3 star venues in giving their guests memories impossible to forget. Obviously, the food is always above and beyond in terms of creativity, technique, use of ingredients, imagination, presentation, surprise factor - believe me, nothing is missing. The chef and his team deserve every praise. The wine list may be not as vast as some of those restaurant featuring hundreds and hundreds of often confusing pages, but it's amazingly spot-on. We always do wine pairing when given the choice, we LOVE wine and we are very demanding in our choices. In all years of dining here, never had anything that would not be meeting and exceeding expectations, always recommended and paired up by the sommelier that we learned to trust with our lives :) And that is where the most important factor comes in. It just feels so comfortable. Don't get me wrong, it's still very upscale, very attentive to detail, can be as formal as you chose to make it for a special occasion. But at the end of the night, it feels just right. All the wonderful "dance" of waiters, hostesses, kitchen team, sommelier is done so flawlessly. Precise, but not annoyingly obsessive. Formal and proper, but warm and friendly. Dedicating just that perfect time to a very knowledgeable presentation, seamless service and friendly chat. It feels like family, and our understanding, many of them actually are (the Chef, the Sommelier, the Hostess). Even the waiters have been working there for what I believe at least 30 or 35 years. They take pride in the business, perfecting it every day with every move they make and that shows. You can read about the cozy "golden age" feeling of the restaurant, the impressive history (since 1614) of the house, the description of recent particular dishes, etc. on other reviews. Trust a seasoned fellow traveler - you will have a great time here. Just go. You will love everything about the place. I wish we could and I can not wait till the time comes to visit it again. It will be the first place we visit after restrictions go away, bar none. We miss you guys!!!More

We were astonished to learn two things: that the ridiculously talented chef of de Silverin Spiegel, Yves Van der Hoff, is still in his mid twenties and that this restaurant does not yet have a Michelin star! We have eaten in fine dining establishments around...the world, and this meal may very well have been one of the finest--if not THE finest--we have ever experienced in terms of presentation, creativity and quality. We chose the 6 course menu with wine pairing and were not disappointed. The six courses with their associated wine pairings were as follows: 1. Dutch trout (trout tartar, beet, sourdough, horseradish with whey vinaigrette), paired with a 2017 Granbazan Etiquette Ambar Albarino 2. Terrine of vegetables (brussels sprouts, black garlic with a demi-glace of vegetables), paired with a 2017 Louis Cheze Marsanne Rhone 3. Codfish (accompanied by curly kale, leek, Dutch smoked eel and beurre noisette), paired with a 2013 Beringer Napa Valley Chardonnay 4. Calf Sweetbread (cauilflower, pearl barley, verjus, mushroom and own veal gravy), paired with a 2016 Peter Yealands New Zealand Pino Noir 5. Rib Eye of beef (candied potato, onion compote, zuchini and grandmothers own gravy), paired with a 2015 Marques de Riscal Rioja 6. Bloodorange (with yogurt mousse, farmers boy's cake, citrus and dark chocolate sorbet), paired with a Torres Floralis Moscatel Oro After post-prandial espressos, we asked our waiter for an Ammazzacaffe (Italian for "coffee killer"). He brought us some 10 year old Zeer Oud Genever, which we learned is a Dutch Gin and the predecessor to British Gin. We spent nearly three hours indulging ourselves in this SUPERB dining experience. The food was superior in every way, the wine pairings exceptional, and the service from our waiter Hari was attentive without being intrusive. He was engaging, informative, and an absolute delight. All of the staff were courteous and helpful as well. This has become a go-to restaurant in Amsterdam for us. Do yourself a favor and indulge!More

My Boyfriend had booked for us to eat here for my surprise 30th birthday celebrations. Everything was amazing from start to finish. As we sat down we were given some complimentary appetisers - the yellow onion bon bon and chocolate tacos were absolutely gorgeous and...unlike anything we'd ever experienced before. Such amazing food and great service experience here. I _strongly recommend_ this place to everyone who enjoy amazing and innovative dishes. Perfect to visit as couple or group of friends. Ambiance of restorant represents authentic Dutch spirit and culture. Any dish there - genius piece...of art. Beautiful and delicious. I found taste as very impressive and memorable. As well as plates - super creative and cute. My absolute favourite: dessert! No words to describe: it should be tried. It might looks "simple", but suuuch various and at the same time full of harmony symphony of tastes. Also I enjoyed much eating vegetables and duck. That ball, covered by fancy feather - such mind-blowing bullet of pleasure ;) We ordered 5 courses menu and was perfectly full and satisfied. I was entirely positively impressed by everything! 🤗 Next time travel in Amsterdam - I'll visit this place again. Very lovely old house, great food and very friendly staff. In this antique, golden age townhouse magnificent food is being served. A gem. It is a formal restaurant however smart casual is appropriate. Dress up if you want, many others do but do not rock up in sportswear. It doesn't suit the restaurant or the service, the waiters are smartly dressed in suits.
