Not a typical brasserie... Inventive cuisine, international flavours & erlebnisgastronomie in the heart of Zermatt. Brasserie Uno is a creative kitchen helmed by head chef Luis Romo & chef Tommaso Guardascione with 1 Michelin Star, 1 Michelin Green Star & 15 Gault Millau points. We are pleased to present our six-course small-plate surprise tasting menu: 170chf per person. Optional wine pairing: 16chf per glass. Apologies but we do not serve à la carte or offer a children's menu. We are a minimum food waste restaurant using regional and seasonal products when possible. Our surprise menu changes with the rhythm of the seasons, so it is not possible to provide a menu in advance. Bookings essential. For vegetarian, vegan, allergies & dietary restrictions, please inform us at least 24 hours prior to your booking, as we are unable to accommodate food requests on the night. I just had the 9 course tasting menu with my wife and it was just crazy awesome.
The atmosphere is cosy, very friendly and relaxed. The prices, considering Zermatt and considering the quality and also quantity offered, are really more than reasonable. I think in Zermatt it's hard to get a better price quality relationship.
We chose the wine pairing for the menu which is also very open and flexible as you can choose to stay with the same wine as long as you want or change whenever you want.
Infact the concept is casual fine dining. And that's exactly what it is. No stiff waitering but very easy, friendly, flexible but also professional.
But clearly the food is the main reason why this experience is so awesome.
Tastes I never tasted before that activate every single receptor in your mouth and the quality of the food is outstanding. Everything is regional, seasonal and technically prepared to perfection.
I would recommend this to everyone who is willing to experience something new in a cool, relaxed, professional and friendly atmosphere. And I will definitely come back as soon an possible.

Move over Chez Vrony & Ivo Adam, Brasserie Uno is the place to go.
We have been going to Zermatt for the last 6 years, over the new years week. Uno, a couple of years ago used to be Bubble, an upscale bugger restaurant which we loved. It has now been taken to a new level by owner Andreas, of Swedish origins, who has had the vision to turn it into a gastro brasserie, with fantastic results.
Still in a low key, down to earth environment, with an open kitchen and freindly service, they have a quite different menu from the usual fare.
We had the 9 course surprise menu (CHF 99.00), which probably was actually 12-13 courses in the end, with great wine, and were not left disapointed (nor hungry).
For those looking for a great evening out in central Zermatt and an incredible food experience, Uno is unbeatable.
Tack så mycket Andreas & team. we'll be back next year.

This restaurant is very small and as a result of this very noisy. The accustic is very bad because of many people crammed in a small place.
When this said it was a very good experience with alternative courses and som good vegetarian choises (not for me :o)
The waiter had very good explanations to each course and it was well arranged on very nice plates. The wine list vere limited, but with some good value for money.
Even though I were a bit sceptic it turned out to be a good meal and a nice evening

We found this place to be overpriced (being fully aware of this being Zermatt). A relatively cramped room with no space even to hang coats. The food is certainly innovative, and it's great that kids can share dishes. But overall we felt the very high prices are not really justified by what you get.

Brasserie Uno has some unique dishes on the menu. We had a vegetarian strudel that was excellent, hard to believe that it wasn't made with duck or chicken. The main dish of lamb was cooked to perfection and the presentation was beautiful. Flourless chocolate cake for desert was to die for!

We had dinner at Brasserie Uno to start the new year (January 1st) and it was a big disappointment. There is definitely an attempt to be creative but it fails to translate into a tasty experience. A couple of the dishes were poorly seasoned and executed. It just felt like the chefs were trying too hard to be special at the expense of proper tastes. The portions were also small and my son left the restaurant hungry and ready for another meal. The prices (e.g. 14 francs for a small glass of Petite Arvine) were really high for the experience. Overall I will definitely give Brasserie Uno a miss during our next visit to Zermatt.

Phenomenal. Our entire family of 4 agreed that it was the best meal we've had in a long time, which includes meals from SF Bay Area, Boston, NYC, London and Switzerland.
The chef's choice concept is very well done here - you tell them what you need to avoid (like allergies or severe dislikes) and they will make reasonable adjustments. For example, my son is allergic to fish so they made a similar preparation with a vegetable.
If you are a really picky eater don't come here because you have to trust them... I didn't bother listing Beets as something I wanted to avoid (I generally dislike them), and yet the Beet dish we had was probably one of the best items of the evening.
The staff is wonderful and the ambiance really IS on the slightly nicer side of casual. Anyone not dressed like a slob will feel perfectly at home.

With a Michelin star you'd expect great food, sadly not the case. Despite the amazing ingredients and techniques used each course was a disappointment. The prawn ceviche had nothing to offset the acid, the beef taco was tiny, soggy and flavourless except for the lime juice
Apple and onion mousse had strange gloopy glaze, accompanied by veg crisps
The wagyu beef didn't look like Wagyu beef and overpowered by pickles (said to be Kimchi but nothing with the depth of flavour of any Kimchi I have tasted), the final course was just whipped cream (perhaps hint if honey?) with a delicate biscuit. This is not Michelin quality food. It takes 3 1/2 hours, plates are tiny so crazy long waits between service. That said service very friendly and ambience great. I don't mind paying good money for creative food, but I do mind being taken for a fool.

Located in the corner of a building, on the ground floor, with large windows to the tiny kitchen, and with a maximum capacity of 40 persons, UNO, named in honor to the Andreas Alm, the Swedish owner’s grandfather, tasteful decorated with furniture from Sweden well integrated in the alp décor of Zermatt. Mentioned in the Gault Millau The place offers a 6-course set menu. That changes following the day and market offer the products to create unique suitability dishes, nothing goes lost, nor trashed. Every item purchased is prepared and served, what also surprises is not only the very tiny kitchen but how dishes are timing and structured, accurate timing in service is managed.
Excellent, friendly and well experienced service, that are aware of each dish and is able to describe what is served.
Reserve in advance and enjoy the dinner, it is worth to be surprised..

The head chef was on vacation when we visited Zermatt this year, so Brasserie Uno became a pop-up serving galettes (savoury pancakes). Over the course of 10 days we ate there 4 times and tried, literally, every galette on the menu. I confess to being a little bit biased before my first visit as I love galettes, however, the food cooked up in this charming, friendly little place, took galettes to a whole new level.
Inventive toppings, beautifully balanced and perfectly cooked - basically gourmet galettes. Falafel, water buffalo, sausage all amazing, but on the last day we visited we all had the pork belly, which was just so incredibly tender.
Good wine list with excellent recommendations for the staff.
The inventiveness and style with which the galettes were delivered was a great advertisement for Brasserie Uno. I look forward to sampling the full menu next summer when we return to Zermatt.

What a discovery! Uno is an old Swedish first name, an ancestor of the owner. The decor has elements of both Swiss and Swedish cultures, but the food goes much, much further. Tomato salad prepared like a ceviche, moose meatballs, portobello mushroom tatin and regulars like rib-eye are all fantastic. Everything has a delicious twist. Add in deconstructed desserts and a great wine recommendation and you have a perfect evening. And then there's home-made limoncello. Enjoy!

Really enjoyed my meal here - it's a set "omakase" which I always enjoy so I don't have to make any decisions. There are just the two guys cooking, serving, taking orders but all very efficient although there was a bit of a wait for dessert. But for just two people, the courses were well presented and the food was excellent. The chef's Mexican roots means that he's got some great peppers and spicy kick to some of the dishes, which I love. Overall, I thought it was great value given the quality of the food for around CHF89 per person excluding drinks. I didn't think the portions were small and left very full.

Wonderful experience. Hands down the best restaurant in Zermatt. You'll need to book in advance. Lovely owner, lovely ambiance and most importantly outstanding food. Some serious gourmet / home made type dishes. I had the duck taco & moose meatballs both dishes had my pallette positively confused. Can't recommend this place enough if you can book a spot. ❤️

What an amazing dining experience! The food was incredible and the service attentive and friendly. I love their approach to food...local ingredients and very, very creative dishes. If this restaurant were in my home town, it would become my "go to" for special occasions or for when I wanted a really great meal. It's puzzling that it is not higher rated.
