The "Sostanza Experience" is somewhat different than other restaurants in Florence. First, it has 2 seatings 7:30 and 9:00 pm. The doors do not open even one minute before 7:30 pm. No bar to sit and enjoy an aperitivo. It is a small space with...community tables and to get to the restrooms you go through the kitchen. Based on other reviews, we ordered the butter chicken and artichoke pie. Both dishes were very good. The service was good, very nice waiter, but it's hard not to feel a little rushed knowing that they need you to leave after dinner and not relax over a glass of wine. There are so many great places to eat in Florence, that for me Sostanza is a one and done.More

This was, hands down, one of our best dining experiences in Florence! It is a very small restaurant with limited seating, and somewhat of a "diner" atmosphere - where you could be sitting with other people at the tables. Please don't let that dissuade you...from coming. The food is authentic, delicious and simply.....GREAT! The staff are all amazing, and treat you like family. It really feels like a local, family restaurant, where they really care about their customers.More

Most charming, delicious and authentic place to eat in Florence. The butter chicken is a must, as is the artichoke omelette and the meringue cake at the end had me on my knees. Just hearty, fantastic cooking, simple and elegant. Beautiful decor, full of real...florentine life, kind staff - couldn't recommend Sostanza enough (if you can get a booking).More

I ordered pizza here and it was very wet and had a terrible taste, we al didnt finished oure meal and they didn’t even ask why. The worst place ever

Is it a traditional trattoria or a clever marketing plot masquerading as one? It actually does not matter as the food is good, table wine decent and service kind & effective. As lovely as Florence is, the centre is overridden by tourists and subpar food...joints. Sostanza was a nice reprieve from a seemingly long list of average restaurants.More

I seldom write a review about restaurants. I am more of a reader than a reviewer. But after much thinking I believe it is important for me to share this. My wife and I had dinner at Sostanza tonight. The outstanding menu was the artichokes...pie or Tortino di Carciofi. The butter chicken was good but the Fiorentine Steak was just ok. It’s not so much the food but the ‘rushed’ atmosphere that we are feeling. From the get go, ordering, food arriving, wine ordering, plates change, desserts ordering, one will sense a feeling that we are being rushed. Next seating was at 9:30 pm and at 9 the bill showed up and they are telling us that they are preparing for the next seating when no one is waiting. We feel that we are like cattle being herded for a certain gain. They shook our hands at the cashier and our waiter even tried to kiss my wife’s hand, but we feel that it’s all a charade to let us forget the rushed or what I would call the ‘cattle’ experience. At our 7:30 seating it’s all tourists, Americans mostly. This place need to learn that tourists are not insensitive to being eat-fast-pay-get-going. The lack of locals at this place might be an indication that the locals has had enough of this rushed environment and only tourists who visits once in a blue moon gets in. What dawned on me is that other restaurants have a lively atmosphere going well into the night where patrons and owners are both happy. I can sensed that only the owners are happy at this joint. Oh, another think, they only take cash. No credit cards. Don’t understand why that’s the case.More

Good marketing but overpriced, tasteless food, served to trick tourists. After living in Florence for a year, I was thinking it impossible to find a trattoria with bad food until I tried the "famous" Sostanza. Small portions, the butter chicken that everyone is ordering is...just a super expensive chicken breast we can eat at home, the bistecca fiorentina is not the "real" one, the carcioffi tarte was basically an omelette. Florence has MILLIONS nice, local trattorias, don't fall for the marketing and the "famous"people that visited Sostanza. They did not know any better.More

We had a reservation, and, on arrival, speaking a little Italian went a LONG way! Sat at a communal table with a mother and daughter. Prosciutto, Tortellini al Brodo, Pollo Beurre, Fagiole al Olio, and Frangoline al Vino…. Come on!!! That Butter Chicken is a...game changer. At the end of the meal, the waiter and I almost exchanged the two kisses on the cheek. A MUST in Firenze!More

We visit 3 years ago with a group of friends and this is how Florence should be experienced. No none-sense restaurant with very friendly and attentive staff. Steak is amazing, as well as the contort but that ButterChicken is a must try and for dessert...the meringa with fresh, seasonal fruits. Out experience here is one of the most unforgettable one. I will definitely visit again and highly recommended. Reservation is a must.More

We had lunch here today based on a friends recommendation and the reviews here. All the reviews rave and rant over the Butter Chicken so we all three had it. For sides we ordered Sauteed Spinach and a Lettuce Salad. The girls shared a cake...desert. The Chicken was good but not great. The Spinach was very good and the Cake was great. Service was good not great.More

The menu is short and simple - the food was all fantastic. Great quality with no fuss. Excellent service. They were not open at the weekends when we were there in February. Booking is essential as they are very popular.

Get the chicken breast in butter. Okay, just wanted to make sure that was mentioned first. And now for the whole experience. I had been told by multiple friends and our travel agent that we needed to go here so it was really hyped up...and we had been let down already... Trattoria Sostanza did not let us down. My husband and I arrived for our 7:30 reservation and were seated quickly while the whole restaurant (a small and cozy space) filled up. We got a small carafe of the house red wine and the artichoke pie to start on our server's recommendation. It was unique and eggy and tasty! For our mains I ordered the butter chicken (based on recommendations from friends and reviews on this site) and my husband had the Florentine beef steak which we could see them butchering in the back. I also got a side of the tortellini in broth since I needed some pasta and that was delicious. My husband loved his rare steak and when I tell you this chicken is the best chicken I've had in my 30 years, I'm serious. It's magic. I pretty much never order chicken at a restaurant since it's just so blah and I can make a blah meal of chicken at home, but this is out of this world. Covered in butter, yes, but so perfectly cooked. Get it. For dessert we had the meringue, another recommendation from our server and it was served with raspberries and was truly delightful, especially paired with their vin santo. It is cash only and we were drunk on butter and wine and are fairly certain we left too much, but it was worth it.More

Super Friendly cramped restaurant , not for the romantics yet compensates with its lively vibes , we went for the steak which turned out mediocre , then we ended up ordering the best pan fried butter chicken , definitely not to be missed .
