I immediately noticed the firmness of the tagliatelle, the moment I touched the strands of pasta with my fork. Unusual and interesting I thought. The pasta strands were firm and slightly on the thicker side and of course they were cooked perfectly al dente. I was there on a Thursday evening and, just as the first time, I had a wonderful dinner. It takes only 5 minutes by cab from the train station so it's the right place to go getting in town or when you're about to leave. The place may be crowded so you'd better make a reservation. In the quiet part of the old city of Bologna this is the restaurant where the locals go. The menus are in Italian and the food is authentic and delicious. Out of the five local restaurants we dined at this was our favorite. Bring your dictionary since everything is in Italian, it will be well worth it.

The best pasta that i had in Italy, the wine selection is also quite impressive! I do recommend for dinner! It's quite easy to find, the restaurant personnel are very friendly and eager to help even though not many of them speak english. The desserts are also good!

We visited based on a personal recommendation, but this was our least favorite dining experience of four food-rich days in Bologna. Indifferent if not downright rude service, overcooked seafood, missing clam meat from empty shells in the featured 'seafood merlo', an uncorked bottle of wine hastily 'plonked' on our table. Had an excellent dinner at this restaurant our last night in Bologna. The space is comfortable, if a little noisy when it's busy, the menu has an interesting mix of regional specialties and more unconventional preparations, and the food and wine are superb, and reasonably priced given the quality.

Good food, fish is nice, Spaghetti Merlò a variation on the classic 'Scoglio' and quite tasty. Pity for the unhappy seating in the lobby and the noise in the main dining room, plus not all waiters are so good (one was quite good, another one a real nuisance).

One of the best restaurant I have ever eat at. Everything you order will make you love life but the most astonishing dish is the Tagliatelle al ragù, that I've asked for since I was like 6 or 7 years old. We had been in Bologna about 2 hours when we arrived at Merlo for dinner and were keen to experience some of the food that gives Bologna its culinary reputation.
