Large, tasty salads made with local ingredients replaced the stuffy three-course meal that was the norm. Nearly thirty years later, Giuseppe and friends are still satisfying their customers with 8 restaurants based in as many neighbourhoods in Rome. With savvy tourists joining the ranks, the Insalata Ricca has become a household name and a must have entry in the best tourist guidebooks.
