Chef Juan Carlo’s cuisine is inspired by the different cultures that have inhabited the Iberian landscape. This interplay of cultures, flavors, and ingridients inspires, and the Chef. With this starting point in mind, Chef Juan Carlos fuses traditional Spanish cuisine (specifically Andalusan from his home town) with new techniques, flavors, and approaches. He takes dishes that have long been forgotten and reimagines them giving the Spanish past a modern twist.

Finally restaurant with food full of taste. We eat duck, sardines and quail. All taste amazing, full of flavours. Excellent service and great atmosphere. Great wine list. Highly recommended

One of the best restaurants to go eat here in Madrid. Everything on the menu is delicious. I totally recommend it. The host is also very nice and funny. (Ask for the famous sangría, their secret recipe is the best)
