I can't answer for the restaurant, but Spanish cuisine doesn't major on vegan or gluten-free dishes as far as I can tell. You may be able to get a plate of grilled vegetables, olives and some vegan salads, but most dishes are fish or meat-based, and bread and breadsticks are universally offered. A vegetarian paella might be what you need, but you'd have to check with the restaurant. Late dining is de rigeur in Spain, so I doubt you'll have any problems eating at 22.00hrs.
