Protégé par les tours et face au spectacle permanent du Vieux Port, le restaurant Les Flots est un endroit incontournable à La Rochelle, riche d’une histoire qui a commencé en 1945. Même si cet établissement a toujours fait partie du paysage rochelais, du bar bistrot qu’il était, il n’en reste qu’un vague souvenir… Le 17 Décembre 1997, Grégory Coutanceau prend la direction des lieux, c’est sa première affaire, il n’a que 22 ans et des rêves plein la tête, c’est le début de la grande histoire des Flots.
