Voici un typique bistrot familiale indispensable de Paris, intimiste et convivial, installé dans le quartier piéton de Montorgueil, rue Tiquetonne. Le patron et chef cuisinier Franco-Portugais José reste fidèle à ses principes d'ouverture depuis 1997 : Produits frais du marché de Rungis, cuisinés à la minute, à l'huile d'olive ou beurre salé. Au TBM, le Fait Maison est une règle d'or! À L’ARDOISE – Avec des plats qui changent tous les jours, le TBM est loin d’être lassant. Même si on retrouve les grands classiques de la maison, le chef du Tir-Bouchon-Montorgueil réalise sa carte en fonction des saisons et du marché. La carte comporte des plats indémodables où tout reste "FAI T MAIN" à l'image
