Le patron et chef cuisinier Franco-Portugais José reste fidèle à ses principes d'ouverture depuis 1997 : Produits frais du marché de Rungis, cuisinés à la minute, à l'huile d'olive ou beurre salé. Au TBM, le Fait Maison est une règle d'or! À L’ARDOISE – Avec des plats qui changent tous les jours, le TBM est loin d’être lassant.
