At HotBox we use a combination of kiln dried Hickory and Oak in our 1 tonne Rotisserie Smoker. The meat is dry rubbed and cooked low and slow(ly) to create tender, succulent cuts that melt in the mouth. Be careful though, theres plenty of spice to get those taste buds fired up!
