Nothing was charged for the booking. We paid after the meal as is usual. I have never been charged for any booking at a Michelin starred restaurant

They certainly do offer matched wines with all menus. I can't remember the cost exactly but around £110 springs to mind. The matching worked exceptionally well in all cases and helped to provide a sublime evening.

No you don't have to but the timings may be a bit off if you don't. The restaurant will do their best to make the timings as seamless as possible. Whichever option you choose have a great time.
