We had a fantastic meal. The cheese board was outstanding and Paul’s knowledge of the different cheeses was very informative. They made us really welcome and if you are visiting the Aude area I can highly recommend them.

Almost impossible to believe but, with the new staff who are absolutely delightful, this is an even better dining experience. As always, our guests were wowed by the atmosphere, exquisite food and the friendly approach of the owners.

Description
Restaurant Aux Quatre Saisons has a friendly atmosphere and is lit only by candlelight at night which bounces off the old stone walls. There is a south facing sun terrace for outside dining . With a focus on locally sourced ingredients, specialities include scallops with sliced black pudding, very large gambas (prawns), beouf Axatois (slowly cooked local beef in a rich red wine sauce), slowly roasted lamb shanks cooked with garlic and rosemary and also blanquette de veau (veal in a white sauce). There are about 40 wines on the list, many local and the restaurant is famous for its selection of cheeses served by the Chef from the cheese trolley. We would love to welcome you.
