We are regular visitors to the Fairmont Mayakoba, and often eat at La Laguna. The food is routinely excellent, with consistent but unobtrusive service. Last night’s meal was no exception, and the lamb shank was particularly good.
Definitely worth having on you your list.

Had the best time at this restaurant. The manager Antonio Salguero was the best. You have to try the tacos they make, never had anything like it. Great place to eat and the view and atmosphere was fantastic. Dont miss out on this one.

You can pay by room charge or credit card. We tried the buffets at multiple places within the Mayakoba complex to see what we liked best, and best of all we could charge it back to our hotel (even when we were at a different hotel!).
So - yes, you can meet there even if you're not a hotel guest. I would just suggest a reservation if you're coming in from *outside* mayakoba. if you're within the compound, just take one of the buggies / golf carts over to the fairmont.
