We have wondered for years how the cuisine of the Republic was, unfortunately we found out. The servers and all of the staff were helpful, joyful and energetic, but the food eh. I had the queso birria tacos, oily and bland . The sauces lacked any real depth or flavor. We shared the shrimp appetizer and again the recipe resisted our taste buds. My date wasn’t pleased with the tacos cochinitas, flat flavored. Again the staff were very friendly, polite and helpful and the atmosphere is energetic and pleasant albeit on a busy, noisy sidewalk. I’d like to say I loved it… but I didn’t.

Another place I went to expecting to have a bad experience but walked away pleasantly surprised.
While it is effectively a tourist trap, its a damn good one. The food here is great, appropriately priced and the servers are fun and augment the visit.
You get a ton of food and it all tastes great. They have delicious drinks and a good atmosphere.
This is now on my PV restaurant visit list on a regular basis, especially for fajitas.

We were staying at an All Inclusive north of the Romantic Zone and it was great to venture out to the Romantic Zone and dine at Republic (formerly Fajita Republic). The restaurant has a great modern vibe with many seats by the street to people watch.
We ordered the 3 protein variety fajita which was shrimp, chicken, and beef and also the Birria. The food came out timely and the the food was on a tray 6 feet away as the staff lit the fajita proteins with tequila and danced. The food was delicious and served hot. The Birria was moist and flavourful.
Jorge was our main server. He has been with Republic for 18 years. This is high praise for owners Fernando and Patty in an industry were staff can come and go like a revolving door. Their care for their staff definitely shows through to the customer.
I highly recommend this restaurant.

Great dinner here last night. Excellent dinner at reasonable prices. So much food and it was delicious. We had the chicken chimichangas and my aunt had the pork which they flamed up in front of the table. The margs were delicious. During the day we walked by and my mom had to sit down for a sec at an outside table. A lady came over and she thought she was going to get her to move but she brought her a glass of water and said sit as long as you like. We will be back!

This place is people watching heaven with food to die for. I love ordering a skillet of fajitas and watching the ‘parade’ passing by. The meat is flavorful, the tortillas are fresh, and the servers have a blast. It’s fine dining for the right price on Basilio Badillo. You walk past it all the time, do yourself a favor and stop by for a meal.

The gentleman who received us at the entrance was a despot, ordinary and rude who only because he arrived 8 minutes late at the time of the reservation told my sister that he would not attend us and that we should go to Ch1ng@d@. When I confronted him he told me that he thought “we were gringos” and that we would not understand what he said. It was the first time we visited the restaurant and already with this experience we will never return or recommend anyone to visit that place.

The atmosphere was great and we walked right in with reservations. The food was sub par. We ordered the Presidential fajita and got 4 narrow strips of steak, chicken and 4 shrimp. Tiny sides. Compared to US order we typically get. It was pretty overcooked. The guacamole was very good as well as the ginger margarita. The mojito was ehh?? We were underwhelmed.

Excellent service by Marcos who was attentive and wonderful, very professional! The food was very good too! Lovely ambience , the only demerit was the restaurant was on the main road so the cars passing by were distracting!
We had the ribs to start that were delicious, I had the fajitas presidente very good flavor and super flambé at the table! My husband had the surf and turf which he loved saying the steak was very tender! For desert we had the fried ice cream which was unusual but good!
Go eat there!!

One of our regular restaurants when in PV. Excellent waiters, good tasting food, more than adequate helping sizes, fair pricing: three drinks, great appetizers, entrees for two plus 20% tip, $56. Walk away full and happy. Excellent menu. Only drawback was slow delivery of entrees—20 minutes or so.

Had a craving for fajitas and this place really hit the spot!!! The food and service was amazing - even did a like song and dance as your sizzling fajitas is served! Also great (large) cocktails!.

The coconut shrimp was over battered and overcooked. We spoke to the waiter nicely and he was quite rude saying “we should have told him earlier” However we were unable to get his attention until it was cold. We did not receive an offer to redo the dish and paid full price even though it was not edible.
We gave the restaurant 2 stars as it was a good people watching spot.
The Fajita Republic in Nuevo Vallarta is much better.

We spend every winter in Puerto Vallarta, and eat dinner out nearly every night. We’ve always stopped by Fajita Republic once or twice a season—when we were craving great fajitas—but we started going more regularly last year, when it was still a little slower than normal in PV due to the pandemic. We met Santiago then who is a truly phenomenal server. He appears to care for all guests in a way we don’t often experience anywhere. The entire staff is truly exceptional (I do think the best in PV) and they welcome us graciously with a smile and a greeting each and every time we visit—very “Cheers”. The food is consistently delicious and affordable, the servers are incredibly attentive and friendly, and the location really can’t be beat (the foot traffic and local street performers are always always entertaining). We now come by two or three nights a week for an easy, delicious dinner. If you’re looking for great food on Basilio Badillo—with incredible, friendly service, Fajita Republic should not be missed.

Fajitas Repúblic has been our favorite restaurant in Nuevo Vallarta for many years. Now open in their new location, it was packed by the time we finished our early dinner. Service was excellent but the food was a little off even though I was reassured that they have the same chef. The shrimp in my fajitas were small, overcooked and rubbery and my tortilla soup did not have the rich, complex flavors I loved so much. The new location was comfortable but it's adjacent to a busy street. I'm definitely willing to give it another try and others in our large party were completely happy with what they ordered.

Comfy sidewalk restaurant. Lots of seating.
Two of our party ordered BBQ dishes. Ribs were tough, and sauce was bland. Chicken on one plate could not be cut. We asked for a discount for food that was not edible, but a full bill was issued for the poor quality food.
Fajita dishes were tasty. They are served with lots of garnish.

Really enjoyed our meal and more importantly service in this restaurant- waiters could not be nicer even if they tried . Very friendly welcome, service and offered plenty of advice. My veggie chimichanga was huuuuuuuuge ( wasn’t so keen on having a pineapple in there, but it is a personal choice). Partner’s chicken fajitas were yum as he doesn’t like spicy food. If you do, ask the waiters to add some heat. Thanks so much Fajita Republic Team - amazing service
