We met James “Jimbo” Morris years ago as the proprietor of the famous and good (see my review) Tex-Mex Jimbo’s, sadly lost to Irma in 2017. He retooled and redirected, however, and opened this swank venue nearby and on the water in February of this year. This is an upscale joint on a level higher than any other on the entire island, and introduces unique creole flavours to classic fare you’ve never had. Don’t expect a quick nosh here; everything is cooked by expert chefs who have evidently spent hours on their mise en place. We started with an order of the crab cake creole (fit for two). Its elegant heat wonderfully accented the delicate crab, as did the mayo/mustard side sauce. Best we’ve had. The missus went for what Jimbo told us was a crowd favourite, the red snapper with sides of sweet potato and carrots. The coating on the generous fillet was very delicate and imparted a sweetness to the tangy and flaky fish that was scrumptious. I went with the black angus rib, with corn and mac and cheese sides. Unbelievable what 12 hours of slow cooking and basting can achieve: a fall off the bone and an utterly satisfying, succulent cut of beef, enhanced by a spicy peppercorn sauce. Didn’t care for the grilled corn; thought it had a slightly petroleum taste. BUT, the Mac and cheese made me a convert to a dish I usually avoid. Al denté pasta into which is baked a mix of cheeses, and bleu cheese in particular that gave the side dish a real tang. We finished with one creole brownie, and promptly found ourselves in heaven. Layers of flavour in the cookie and chocolate just kept coming. Jimbo’s ubiquitous but never intrusive presence and wry humour ensured a great experience, enhanced by the attentive service we received from the very helpful Katarina. With a bottle of 2020 Joseph Drouhin pinot noir, $171 before gratuity. Whenever in St Martin/Sint Maarten, you must eat here.

What a fabulous restaurant. From the moment we arrived the staff greeted us with a smile and that continued throughout our meal. Having friendly attentive staff makes such a huge difference in making a great evening even better. I can not speak highly enough of our whole experience at Nola, the cocktail of the day was delicious, the surf and turf steak was perfectly cooked and lobster just melted in the mouth, the crab cake starter is really worth trying just full of flavour. The restaurant is overlooking the lagoon so water views help create a superb setting for delicious food and a superb night out. Great ambience, delicious food , good value for money and attentive staff,

Nola’s Bayou Bistro is a great addition to the diverse restaurant scene in St. Marten; featuring New Orleans inspired dishes. I ordered the Mumbo Gumbo (their take on a Seafood Gumbo) for a main and the crab cakes for an appetizer. The crab cakes were to die for and the Mumbo Gumbo was not what I expected but full of flavor. The cornbread and biscuits were light and flaky. Other highlights included the Mac and cheese that a friend had and the amazing Catfish. My friend’s brother ordered the filet mignon and he spoke highly of the taste and quality of the meet. The menu also includes Southern fried chicken, lobster, oysters, and ribs; so there is something for everyone. I look forward to dining there again. Hopefully the next time I will be on a date because the candlelight and decor would help make it a perfect evening.

Beautiful restaurant and location, seemed very clean and well managed. Food wasn’t impressive… shrimp cocktail was small sized for $16 and cocktail sauce tasted more like ketchup than true cocktail sauce (no bite or horseradish to it). Crab fritters at $22 were flavorless and rubbery, didn’t even eat them . The tomato salad was very good!! Bayou Mac and cheese ($10) was dry and undercooked. Overall the flavors lacked a New Orleans /bayou taste you would expect from the name. The choc pecan pie was great!

The inside of the restaurant is spectacular. Unfortunately we can’t say the same thing about our experience. The drinks were good but the bartender was a bit surly and very slow. A guy stopped by to say hello. Believe he is the owner but he did not introduce himself. He was eating a roll while he was with us which was a bit weird. We ordered the lobster etouffee. I bartender said it was a 7 on spice level. We like food with a kick but not really spicy. It was more like a 2 on spicy level. The dish tasted fine but it was mostly rice with four very small chunks of lobster on top. Not worth $26. Next we ordered the gumbo and a Caesar salad. The gumbo again tasted fine but had only 3 pieces of sausage and no chicken. It was mostly rice. It was also a tomato sauce than a roux. The salad was good but had a pile of chewy Parm cheese pieces that weren’t edible. That was enough for us. None of the staff including the owner cared that we weren’t happy.

All of us NOLA are very care about our customers. I really appreciate your review and, with the chef, realized, after your review, that the amount of chicken and sausage in the gumbo was not consistent, so, thanks to you, we now portion control and add the same plentiful amount every time. I am really disappointed to have to say this experience was very disappointing. We live near by so really really wanted this to be a great food experience. This is our third time here since they opened but I have to fat this was this worst experience and it will be our last. We ordered the short ribs and the red snapper. The short ribs were 95-% fat and the red snapper was so small we wondered where our was caught. The sides were flavorless as well. Service was good and ambience was beautiful but thats not enough if your wanting to have an enjoyable meal out,

NOLA...Jimbo's new restaurant right on the "bayou" in Simpson Bay has raised the bar for the dining scene in St. Maarten. Seriously...there's not another restaurant on the island that serves authentic Cajun / Creole food that the chef offers at NOLA. As one would expect, the food is spectacular, the staff is pleasant and hospitable, and the atmosphere pulls it all together. Congratulations to Jimbo and his team!

We learned about this place last May. Finally checked it out. The atmosphere is amazing. The staff were very friendly and catered to us like we were the only guest. The food was great. The bread was amazing. I had the local snapper. It was awesome. The jambalaya A little kick but he loved it. The crab cake was really good but a bit spicy for me I would go back

They did an amazing job on the decor and layout of the restaurant. As always Jimbo interacts with the diners, which makes the dining experience so much better. Jess , Shelly and the rest of the staff are so friendly and welcoming. We wanted to try something different so we both got Red Snapper Papillote. It’s a steamed fish with herbs and seasonings . It was wonderful. So many different tastes in every bite. We will add NOLA’s to our must go to list, every time we visit St. Maarten

Lovely setting and friendly staff. Food was lovely too until 4.00am when the red snapper decided to make a re-appearance!!! Now we all know a rogue fish gets through now and again so this is just a note to let you know it can happen at the best of places. The short rib was tasty and stayed put!

Started with Oysters and Crabcakes, so good! The shrimp and grits are full of butter and delicious! Steak was done perfect! The owner came by several times to check on us and I would go back anytime!!

The ambience at NOLA was mesmerizing: as though you’d walked into a sophisticated eatery on the shores of Lake Ponchartrain!
A lively, friendly atmosphere at the long bar spilled seamlessly into the dining room of this newcomer. Elegant, authentic decor and lively twists on Creole Cooking.
The food and drink fueled the conversation! What could be better?

The restaurant is right on the water with beautiful views, great breeze, beautiful decor and friendly staff. The food was phenomenal!!!! This is the best restaurant we've been to in 32 years of coming to SXM!

My husband and I had dinner here last night and we were blown away! Beautiful location, right on the water, service was outstanding (I wish I knew the young man’s name who was serving us, he was wonderful), the manager was very friendly and attentive and the food was out of this world! I got the chicken and HIGHLY recommend it if you go! My husband got the surf and turf and was also amazing. If you’re in SXM, head to NOLAs. You don’t be disappointed!

Amazing! I came with my family in order to celebrate Valentine’s Day and I must say it was nothing short of fantastic. As we walked in we were greeted and seated. I enjoyed the variety of the menu from sea food to vegan. I enjoyed the live music and the wine paired with our meals. I will definitely be visiting Nola again
