Marmalade only serves tasting. Groups of five or less only are allowed to select their own course thus creating an individualized tasting menu. Each tasting menu at the table may be different. We don't offer a Ala Carte format for dining. Groups of 6 people or more will be invited to taste Chef's seasonal tasting menu of 14 courses. Dress appropriately please no sandals in the restaurant.

Absolutely extraordinary from start to finish. I ordered the five course tasting menu and each presentation was delivered with a wonderful definition by Bianca, our waitress and it was prepared perfectly, presented perfectly from stemware to cutlery and to the plating. There are a few locations you can go in the world to experience Fine Dining such as marmalade. Absolutely deserves 1-5 Michelin stars. Some may consider this expensive but, pound for pound it’s worth it to experience something this special.

We ate at Marmalade on a whim when we were in San Juan 6 years ago, and we decided to try it on our last trip (Jan 2020) to see if it lived up to our memories. I am happy to say it surpassed our expectations! Marmalade is a "make your own" 4-6 course dinner. It is not inexpensive, but it is more than worth the price. You are paying for someone to create a dish for you that you will not see or experience other places. The portions individually are not huge, but after 4-6 courses, you will be extremely full. They have lovely vegetarian offerings (a whole section of the menu, in fact), and my husband cannot stop raving about his steak. The wine list is superb, and they do a great job of pairing wines with the individual dishes. My only regret is that we only had time to eat there once during our trip.

This was the best meal I have ever had. Each dish was better than the last. Ate so much felt like I was going to explode but couldn't stop because it was all so delicious. Hilarious drink menu was definitely a bonus. Being from New York City it was also an excellent value relative to what I am accustomed to for such high quality offerings. You get to customize your meal and deciding which courses to get was some of the toughest decisions of my life.

Opened in 2005, an Old San Juan address and elaborate Wine program quickly earning accolades from locals and tourists, Chef Peter Schintler’s Marmalade is routinely cited as one of the Island’s best Restaurants, the six course menu for $109 offering decent value for plates constructed largely from local Ingredients. Born in rural Iowa to a farming family, respect for the land and affection for the kitchen established early, it was following formal culinary education that stints overseas saw Chef Schintler hone his craft, a return stateside to Greenbrier followed by Le Cirque yielding further travel before finally settling into a kitchen of his own. Referencing everywhere from England to Singapore across fifteen years, these diverse experiences evident in Marmalade’s offerings, it is amidst chic confines that guests are seated in posh chairs or sofas, service professional but pleasant save for some pushiness regarding the Wine List. Proud to promote sustainability, as well as cookery far lighter than much of Puerto Rico’s traditional fare, it was after some discussion that a Tasting Menu was decided, course one featuring tiny cubes of Tuna in a makeshift Terrine intended to be spread on miniature Pita. Easily dispatched in four bites, a hint of heat lingering on the palate, it was not long before Chef’s “signature” White Bean Soup was presented, its texture sublime but any sort of subtlety erased by the cloying presence of Truffle Oil. Making a tough decision amongst Pastas, the eventual winner an assertively bitter plate of Garganelli with Crucifers and braised Rabbit brightened by Tomatoes, one would be hard pressed to name a “lighter” rendition of Pork Belly than Schintler’s thick cuts with well-rendered Fat finding balance in Blackberries plus Honey. Opting for two Desserts instead of a duo of Appetizers, plus good Espresso to finish, Pastry proves to be a strength thanks to classic technique and fresh Fruit, the Cake akin to Clafoutis with a bit more tooth while Marmalade’s Seasonal Blueberry Cinnamon Roll presents a buttery spiral resting in a pool of boozy Custard with Ice Cream and Bacon on top.

Upscale restaurant in Old Town San Juan with chic ambiance offers numerous options on the tasting menu or a la carte. Our party of three especially enjoyed the white bean soup, Moroccan tuna tartare, lobster risotto, lentil meatballs, lamb tagine and an interesting twist on “surf and turf” with scallop and pork belly. Delicious combinations of international flavors with adequate portions made for a great meal! Our server, Jose was very knowledgeable about wine pairings and he went above and beyond to ensure that our dining experience was delightful!

From the moment you walk into this restaurant you are aware that it is very special. The decor, ambiance, and seating are all so well thought through that you feel like it has been prepared just for you! The wait staff are courteous and knowledgeable and you never feel rushed or pressured. The food quality and variety are amazing and all dishes are delicious and worthy of five stars. Incredible experience!

Let’s start by saying how lovely a place Marmalade is. Though it’s small, the decor which includes soft folds of fabric and placement of the tables makes it feel private and intimate with limited views of other diners. The service is impeccable, personal, and our server was knowledgeable, articulate, kind, and friendly. Moving onto food: husband viewed menu on line and said there was nothing he liked! But, he decided to be adventurous even ordering fish (not a favorite of his) and trying the white bean soup (even less of a favorite of his). With each bite of each course, he was more and more impressed not just by presentation, but the taste. Everything and I mean every single menu choice from the signature white bean soup to popcorn shrimp, pork cheeks, lamb, desserts was delectable and beautifully presented. The occasion was 70th birthday of a friend. The GM stopped by our table to acknowledge the occasion and I mentioned my birthday was 5 days later. Desserts came with a candle in two of them presented to the celebrant and myself. You don’t find this attention to detail often! It is the dining experience of a lifetime!

My family and I have been going to Marmalade for over 4 years. It is always our top choice when we find ourselves in Old San Juan. Chef Schintler is an incredibly talented (and humble) chef with an impressive and extensive background and the team that he has put together at Marmalade is the best — hardworking, hospitable, warm, and incredibly entertaining. In fact, one of the two reasons we always choose Marmalade is the people (and #2 being the food, of course). However, on the night of 11/25, I invited my friends (we were 4) for dinner at Marmalade and we were incredibly disappointed with the service. Cristina, our server, was quick to remind us (over 5 times) of the curfew every single time we ordered something. We know we need to leave by 9:45pm — we have been here since the pandemic started. Because we arrived at 8:17pm, we decided to get 2 drinks at a time, to which Cristina replied “you don’t need to have 17 drinks at the table” and “you’re too skinny, you shouldn’t get two Negronis at a time.” Firstly, was the first round of drinks and second, there is no need to call out someone like that. The night went from bad to worse and we were truly disappointed that Chef Schintler would hire someone with such a bad attitude, when the 100 other times we’ve been the service has been excellent. We hope that this message ultimately helps Marmalade, as staff who behave like that in front of clients completely ruin the amazing experience Marmalade has been offering for years. Thank you.

Claudia, Thank you for your recent visit and continued support of the restaurant. It is always a pleasure to host you, your friends and extended family. I share in your frustration of the regulations put in place by our Governor as restrictions placed on restaurants like ours will eventually lead to temporary or permanent closure. In the previous week we have witnessed several restaurant closures due to the continued occupancy and consumption by guests after 10 pm. We have and will continue to be diligent and disciplined with the regulations that are in place. For this reason as with our two hour dining experience, we try not to take any seatings after 8 pm so we can offer you a relaxed and pace dinner. Cristina, well intended but perhaps poorly articulated was concerned about the repercussions of this governing curfew. It is an odd and troubling period that we are operating in trying to allow our customers the physical and mental freedom to escape life's challenges for a few hours before we have to remind them that once again they will need to return to reality and depart by 10pm...... Like all of us, we are overcoming new obstacles everyday in the pursuit to stay open, so I thank you for your patience and tolerance and we will work thoughtfully on how we can more graciously remind our guests the confinements that often surround them. This was a very special dining opportunity for our 30th wedding Anniversary. Marmalade is a very popular restaurant, so set up your reservations early. We booked a week before and they only had early or late tables available. This was our first opportunity to dine here and we were happy with our selection. The dining experience at Marmalade is outstanding. Our table was nicely set with white linens and rose petals. Our waiter had great energy and was helpful in selecting menu items. Marmalade has 4, 5, or 6 course meals with a separate wine pairings for the menu selections. The different menu items were delicious and wine selections were great. The 4 course selections were plenty for our appetites. After the dinner, we didn’t feel stuffed, but satisfied with the amount we had. Definitely a great restaurant to eat at while in Old San Juan.

This restaurant, situated in the heart of touristy Viejo San Juan, is exquisite. While most of the restaurants in this area cater specifically to tourists, this restaurant doesn't dumb itself down for anyone. The atmosphere is cozy and serene, and the chef came out to see how our meals were. You can choose between four, five, or six courses, and each meal is delicious enough to leave you eagerly awaiting the next course. Their seafood is sublime (get the ceviche and the salmon), and the desserts are heavenly. The staff were friendly without being intrusive.

Superb food, in fact some of the best food I’ve ever had and I’ve been to the Fat Duck (UK). Lovingly crafted courses (we had the the taster menu). Exquisite tastes and food sensations to delight the pallet. Staff were incredibly willing to be helpful and adapt the dishes to our personal wants. A bonus was the executive chef and owner touring the tables to talk to the guests. He was very engaging and very passionate about his restaurant and the food. A perfect night - expensive but absolutely worth it and much much cheaper than the equivalent quality restaurant in New York or London.

Since I was staying at the suites right next-door I figured I had to try it even though I’m not typically crazy about doing prices fixe menus. This is definitely an upscale foodie place. Atmosphere is high-end and the clientele in general matched. Sat in the bar area at the community table. Service was solid and the food was as well, I did the four course meal. My only major comment is you’re paying a ton for what I thought were smaller size portions and while everything was good nothing was great, nothing stood out. Not sure I would do it again, but for a lot of people this is probably the spot, especially if money doesn’t matter.

Experiencing a tasting menu in the heart of Old San Juan was not something that my girlfriend and I expected on our first visit to Puerto Rico. This meal was incredible in every way. As good as the food was our waitress was even better. She expertly guided us through the five course tasting menu complete with wine pairings and described each bite of food. It was an experience like no other. Also, always opt for the five course tasting menu which includes their signature soup (which is to die for).

Beautiful and Cozy Restaurant. Superb fine dinning. You may choose between 4, 5 or 6 courses but if you want they may offer you a 3 course table. All their staff were well mannered and manager were very helpful when we have another guest for the table so manager helps me to accommodate my additional guest. Food was excellent, I strongly suggest the white bean w truffle soup, beet salad, gnocchi and the for dessert we chose the Bake Alaskan over Passion fruit...

If you are looking for a culinary experience with excellent colors, textures, flavors and presentation this is the spot! Chef Schintler has his restaurant dialed in on his menu under his direction in the kitchen. As an example the Tartare is served in a bone that was sanitized and sanded. Our server explained that if you were late for a shift you got to sand the bones! Haha! Our server, Haiti, had a great passion for her profession! Her expertise on the wine pairings was spot on. She was able to handle any menu questions or methods of preparation effortlessly! I dine out often and Haiti was one of my top five experiences with service. Great job! I took away a half of star based on our experience with Hostess and the General Manager. Our Hostess took us to our assigned table in the back corner of the dining room. I asked to be able to sit in the middle of the dining room. This didn't go over well. With a bit of an attitude she said said "pick any table". As for the General Manager he never once approached our table to see how we were enjoying any of our courses. Our previous dining experiences at Marmalade Chef Schintler was in the dining room checking on every table through out the experience. Chef set a high standard which wasn't met unfortunately. I was curious as to why Chef was now in the kitchen and not over seeing his dining room. Never got a chance to ask. The decor of Marmalade is beautiful and make sure you see the restroom. The remodel was outstanding!
