Chef has carefully composed a menu that speaks to the gastronomic diversity of the region, often including elements from France, Spain, Morocco, Greece, and Turkey, all in the same dish. The kitchen centers on the “taboon”; a giant wood burning oven for baking homemade pita and flatbreads as well as roasting meats, poultry, and especially fish. In addition to Chef's award winning hummus, the menu boasts such signature dishes as; Taboon Charred Octopus, Whole Heirloom Cauliflower, Homemade Flatbreads, Organic Free Range Chicken with Chicken Foie Gras Merguez, a Taboon Whole Baked Fish, and the Chef’s personal favorite, Lamb Terracotta: a La Boîte spiced lamb kebab with taboon grilled vegetables, tahini and pistachio baked into a flaky bread terracotta.
