It is great to hear you enjoyed yourselves, and the detail you have listed is fantastic, for both myself to analyze and other people reading online - but it does in fact seem that the night could have gone better! Just to help you along the way, depending on how the service is going, we usually leave tables stripped if we do not expect further service from bookings, thus why it seems a table would have to be prepared for you while the restaurant was dwindling - or they might have had a guest leave a particularly lovely table, and wanted to give you the best available sitting. In regards to oysters, we get a fresh supply daily, however we only stock a limited amount to ensure we use only the freshest ingredients, such as we may change the catch of the day during service for this reason as well. Sometimes we can run out if they have a lot of orders, which unfortunately, may have been the situation you experienced.
