are there any good local restaurants neat the hotel
Not that I am aware of... You would need a car to get to Siena, unless you are in the mood for a good biking trip. There may be restaurants at some of the inns around the area. The restaurant at Borgo Scopeto is superb, by the way.

I have been wanting to visit this hotel for a while now and are planning on visiting next summer for 3 nights. I appreciate it is in the middle of nowhere but we are not really wanting to hire a car. Is it feasible to get a taxi into siena for the day and roughly how much would this be or how would we go about hiring a driver?
I agree with the other answers. We had a car, and I drove all over the area, including in and out of Siena several times. It is a 15-20 minute drive, although that is because of the hills and roads, not the distance. I would contact the hotel and ask them if you are concerned, but I would think it would be no problem at all to get a taxi or other car service through the hotel.

Is there a dress code for the hotel (should we wear formal shoes and trousers for dinner, for example)? Or can we just dress informally (but decently, of course)?
You can wear any clothing at the hotel. There is no a dress code!
