Arriving Friday afternoon and thinking about the $75 valet. Is there a certain time we have to pick up our car by on Saturday like we would have to at a parking garage?
They are open and accessible 24/7, but you will for 2 days ($150) any time on Saturday. They don't clock it; it is by the calendar. If you car is there on 2 days, $150.

Has the management stopped the unethical gouging practice of advertising a room rate and then adding a destination fee as an additional charge? Other properties have ceased the practice and I was wondering if the Eastside Marriott has seen the light and returned to a more transparent pricing structure.
Scam or not, its disclosed when you book online. It's a personal choice at that point. With that being said, they are still charging it unless you qualify for an exempt rate (e.g. gov't rate, etc). Most, if not all, allow you to use it as a food/beverage credit.

Yes, but ask at the concierge desk for information on free coupons or other discounts that more than cover the extra charge.

Can tickets for local attractions be purchased at the front desk.? Do you have to pay extra for a mini fridge? At what time does the pool open.?
Good Day, Local tickets can be purchased from the Concierge Desk, there is no fee for the mini fridge which we have in every room. Sorry to let you know that we do not have a pool. Regards Allan
