Unfortunately, you won't get much in the way of privacy on your terrace. The layout of the property means that there are staff and guests walking up and down the stairs between the pool and kitchen and their rooms throughout the day.
We didn't find it much of a problem but I can understand your desire for privacy. The view is so amazing that we didn't mind the people passing or the other guests in the rooms to the side of us.
On the plus side, breakfast is prepared room by room and the times are staggered so you should have relative privacy at this time.
I'm not sure how other properties in the surrounding area manage this issue. I expect that it could be a problem in many places in Oia as space is at premium.
