My friend and I have just had a marvelous, peaceful, and relaxing stay at Thyme in the Country. After a grueling year teaching in-person and remote, Mary's place --with its authentic, rustic, back-to-the-land atmosphere--was the perfect place to recharge our batteries. Each room is carefully decorated with antiques, wood furniture, and old embroidered linens and doilies. You start the day with a delicious, healthy breakfast made with ingredients from Mary's farm and served on the outside patio. During the day, upon returning from an outing, you are greeted with freshly baked cookies or strawberries from the backyard, and delicious homemade aqua fresca. Make sure to bring a bathing suit to take a few laps in the chlorine-free water and then nap in the hammock. Thyme in the. Country is a truly authentic eco-friendly place surrounded by farms and apple orchards while being only 10 minutes aways from the town of Hudson. We highly recommend this hidden gem! Stayed in the Ecco cottage. Well equipped and clean. Hung out all over the property and enjoyed floating in the pool Had dinner in the huge garden at sunset Breakfast in the yard under a tree, and lunch by the pool. All were well prepared and easy . (Even over heard them digging up the potatoes an hour before we ate them! That was very exciting 😊) Polished matching silverware, and real down pillows. Even the allure of very cool Hudson couldn’t make us leave We will be back Jenny and Paul

The Rose room was spacious; our bed was comfortable; we appreciated the lush bathrobes and creative, delicious breakfasts served in a window-filled room overlooking the garden, but the best part of our stay was meeting the delightful people who - unlike us - know and return to this charming inn time after time, and the warm, welcoming staff. Our stay was for a wedding nearby but it's clear we stumbled on a very special place treasured by many, and we would gladly return.

We stayed for 3 nights at Thyme in the Country and wish that we could have stayed longer! The breakfasts are wonderful and feature cage-free fresh eggs and organic produce. My husband and I stay at Thyme in the Country last month. We booked 4 nights but shortly after arriving we wished we would have booked more! This is a charming and well-run establishment and our experience was outstanding. We especially enjoyed the company of proprietress, Mary and looked forward to our morning chats at breakfast, which I must say was delicious. Mary and Anna’s baking was so homey and delicious especially the thoughtful homemade treats left out for you in the evening. We loved our room and amazingly comfy bed as well. Meant to ask Mary about the mattress because I haven’t had such a comfortable night’s sleep in a long time! The garden and saltwater pool were a delight as was the cute but stalwart Mr Shivers (resident pup) who kept a friendly eye on things! We left Thyme in the Country feeling like we had a new ‘home’ and a new friend in The Catskills. We plan to return sometime soon. 💕 Nancy & Dan

We've been to Thyme in the Country several times to celebrate many occasions - Mary makes sure to make each time extra special. Mary's breakfasts and snacks are delicious, fresh farm to table. Mary accommodates food allergies without ever compromising taste; her garden is spectacular we always are sure to buy fruit and vegetables when we go; we meet the best people there because of Mary's warmth and attention to excellence attracts terrific people - we make sure to visit Mary and Thyme in the Country every year - Debbie and Rob

Staying with Mary is like staying with your favorite aunt. This is a truly special place -- isolated in the country yet ten minutes from the creativity and fun of Hudson; an ecologically conscious farm and property that still feels warm and homey and comfortable; a place where interns learn about sustainable land use but everyone feels like family; a place where there are bins for composting and grey water is reused but there are amenities like air conditioning, clawfoot tubs, and a (!) 24-hour swimming pool. My husband and I came here for a week to unwind and write. It was a dream. Delicious farm-to-table breakfast, day trips, walks in the garden, cute puppies, from-scratch baked snacks at night... and always Mary, friendly and caring but completely respectful of your space. Comfortable and private and warm. Completely special. Come here and don't regret a thing.

It's actually our fourth time. Couldn't have been better. We opted for Mary to make us dinner one night and we highly recommend this! We ate by the fire and it was lovely! We spent that day walking the entire grounds, reading in the sun and then having a truly first class dinner without leaving the property : ) We stayed in the eco-cottage this time (we rotate between it and the house) and we love it. Wi fi is totally fine, for those who need it, bed and bathroom are about as good as it gets! 5 stars!

Mary was the perfect owner and hostess! The house is very comfortable, with a creative mix of old and new decorations and furnishings. Mary made afternoon and evening snacks, and the breakfast contained fresh and delicious greens, tomatoes, herbs, and other food from her gardens. We ate outside at the picnic table the second morning, which was so pleasant; the whole property is gorgeous. It was fun talking to the guests, as none of us were in a hurry to go anywhere. Also on the property is the chicken coup, the pond, inground pool, the gardens, and the alpaca farm nearby. We really enjoyed our romantic anniversary weekend.
