Stayed in the Ecco cottage. Well equipped and clean. Hung out all over the property and enjoyed floating in the pool

Had dinner in the huge garden at sunset
Breakfast in the yard under a tree, and lunch by the pool. All were well prepared and easy .

(Even over heard them digging up the potatoes an hour before we ate them! That was very exciting 😊)

Polished matching silverware, and real down pillows.

Even the allure of very cool Hudson couldn’t make us leave

We will be back

The owner, Mary is as welcoming as can be. She was accommodating to our food allergies as well as being vegetarian.
The positives: You really have full access to the house. There are 3 sitting areas. One has a wood burning stove and the other a fire place. She has books, games and even a piano to use. Breakfast is served between 8:30 and 9:30 but if you want to eat later it doesn’t seem to be a problem. The room (rose room) was a very generous size and the bed was comfortable. Also, there is tea and coffee available at all times as well as little cookies which is a very nice touch. All the food is farm fresh. The eggs are from Mary’s chickens and so is the milk. If you can’t drink whole milk, just tell her ahead of time!

Disclaimer: I feel bad saying anything negative because Mary was so nice however I feel it’s fair to point out certain things.

The negatives: Check out time is at 11am. We thought if we had our room cleaned out we could hang out downstairs and read but we were asked to leave. (In a nice way but still a negative in our eyes) We were looking forward to just reading in a quite comfortable place. Also, this is not a bed and breakfast that affords much privacy once in your room. The doors are not butt with the floor and you can hear everyone upstairs. People were respectful but you couldn’t help but hear them which means they could hear us too. Finally, the water pressure was not so great in the shower.
Neutral: The light comes in the window treatments in the morning. For some this is great, for others not so great.
Warning: There are two entrances with the same number. The bed and breakfast has a relatively open area when you drive in with the house on the left. If you see a garage in front of you, this is not the right entrance!
We found a lovely place in Hudson to hang out in called Cafe le Perche on Warren Street. We read and had delicious food too and luckily there was a fireplace there as well. If you go this place, read about it and make sure you ask to see the incredible oven. They have an interesting story!

Thank you so much for your comments. Although the B&B and the Eco-cottage are 2 separate entities with very different amenities we offer the eco-cottage as an optional guest room when the B&B is fully booked or as an alternative, closer to nature/ farm experience type of stay. Guests staying in the eco-cottage can be assured that their impact on the environment is truly minimal as all the eco-features that you mentioned including solar hot water/electricity, organic gardening/ minimized use of petro-chemicals and fossil fuels, and recycled, reused and restored materials are all incorporated into your stay with a significantly reduced room rate.

We stayed in the Eco-cottage, a cozy little cabin a little ways from the main house. The setting is really lovely, especially if you are coming from a city and need some fresh air. Just watching the stars at night while hearing the crickets and cows was very soothing. The grounds are covered with beautiful flowers at every turn. We took a dip in the naturally treated pool in the night and it felt wonderful. There were fresh fruit in our cottage and the breakfast was truly outstanding, down to the homemade raisins in the corn porridge and the fresh peach salsa.
The caveats: the cottage is attached to the cow barn and we could smell the barn the whole time we were there, which you may or may not find enjoyable. The compost toilet was fine, though you do have to leave the cottage to wash your hands, and the shower is a bit farther away than I expected, but doable. Overall, it is a pleasant rustic retreat for those not expecting a cookie cutter motel.

Our family (two adults and a toddler) booked a one night stay at Thyme in the Country via Priceline.com and selected a $110/night Queens Cottage option. The room description on Priceline.com and Booking.com promised a room with "en-suite bathroom". Room amenity section also includes "shower or bath", plus "a private outdoor shower", which sounds like a nice option to have.

Upon arrival, we were surprised to find that the "en-suite bathroom" is really just a composting toilet (with no sink or running water for that matter). In order to wash hands one needs to get outside. And the "outdoor shower" is the ONLY way to get a shower, which is also about 30 yards away (attached to the main house). There was no way we could wash the toddler there. In addition, the room smells badly.

We pointed out to the owner Mary about the misleading information. She was quick to blame Priceline for having the inaccurate description (wonder who wrote these words). Given she has other rooms in the main house (but are $55-$70 more expensive), we asked if she could help us out by giving a $20 discount to stay there. Her response was "I don't see why I should." (Great customer service!) As she pulled out her own cell phone to read w/ us the description about the outdoors shower on Bookings.com, she murmured "I don't know what that means..."
As a result, we started looking for other B&B in the area. In the meantime, we made sure to asked and she specifically promised to give us a full refund ("I'll give your money back"), which made our decision easy. .

Soon after we left the place, we were told by Priceline that Mary turned around and insisted on charging us $25 cancellation fee. As we called her trying to clarify the misunderstanding, she rudely refused and claimed the $25 charge was there all along (she never mentioned a word of it when we were there for at least 30 minutes that day)

We found her attitude throughout the entire process dishonest and unwelcoming. We travel around the country and have stayed in many B&Bs, this is far and beyond the worst B&B experience we've ever had from the beginning to the end! If you are thinking of trying this place out, please use caution!

I love this B&B. I just spent 3 nights there and it was my 2nd time staying there. The house is charming but also comfortable - you feel right at home. The owner, Mary, is so friendly and helpful and makes FANTASTIC breakfasts. The first time I stayed here, I met up every day with relatives who weren't staying here and they were jealous every morning when I told them what I'd had for breakfast. Mary also serves up a treat in the evenings - we had homemade doughnuts one night, cookies another night, spice cake another night.

There are 4 rooms for rent - 2 of the rooms share a tiny bathroom. The other 2 rooms each have their own bathroom that is quite nice. The beds are comfortable and everything is clean.

If you're in the area and looking for a comfortable, charming place to stay, I highly recommend Thyme in the Country.

Thank you so much for your kind words. I wish I had seen this review earlier. Business has slowed down enough now (February) and I have time to check reviews and seeing yours brought back the memories of your stay and early winter. I am so happy you all had a great stay here. Just 2 days later, "the" calf was born. HE was so adorable and only here on the farm 2 weeks. We sold him to a farmer in Virginia to grow up to be a Dutch Belted breeding bull. Hope you are enjoying a snowy winter, it never happened here. Thank you so much for taking the time to write a review about your stay with us. I hope we see you all again someday. Mary

Thyme is an absolutely fantastic b&b. Mary and Bill are great hosts and Sarah is a wizard in the kitchen, coming up with original, interesting and delicious breakfasts. Did I mention the delicious breakfasts? Our room, the eco cabin was emaculate and very comfortable. The grounds are beautiful and as a working farm with land to roam the stay was wonderful. Definitely a place to return to.

My husband and I spent 3 delightful nights in the Sumac Room at Thyme in the Country. We were so happy to have found this place, it was just what we were looking for, peaceful and bucolic, owned and operated by the warm and welcoming Koch family. Sarah, their cook, is not only a whiz in the kitchen but a pleasure to know. We also had fun playing with the family's two calm, quiet, sweet-tempered and affectionate dogs.

Located about 6 miles outside Hudson the attractive grounds include fruit trees, vegetable and herb gardens, grapevines, chicken coops, a large pond, a badminton net and set, a clean beautiful pool, cows, an eco-cabin, a fabulous 4 person glider swing, parking spots and more. I wish I'd brought binoculars as there are many species of birds on the property and we enjoyed walking around in the morning.

There are 4 bedrooms in the guest house on the second floor (the owners live in a separate house a short distance away) all with queen size beds and ensuite bathrooms, though the Lavender room shares a bath with a twin bed room and is ideal for families. They're all clean, cozy and handsomely decorated in country style. They each have special features, for example, our room had a separate clawfoot soaking tub and beautifully tiled shower with good flow, while the Rose room features a fireplace. We also had a nice desk and secretary, a very comfy leather easy chair with ottoman, and loads of storage space including a closet and chest of drawers. The room was light and airy with a view of the fields and garden. Bathrobes, iron and iron board, a good hairdryer and eco-friendly amenities, including homemade soap and fragrant peppermint shampoo and conditioner, are included. The towels are large and so soft and fluffy! We found the bed to be very comfortable with quality linens. WiFi is free, we had no trouble connecting our devices and the speed met our needs.

The main floor features the kitchen, dining room and cozy sitting rooms, one with a TV if you want one, as well as books and games. It's really like staying in the home of friends. The smells from the kitchen are enticing and there's tea, coffee, fresh milk and fruit to enjoy whenever you want, plus every afternoon Sarah bakes some scrumptious treat. Among the ones we enjoyed most were a flaky strawberry-rhubarb pie and tasty bite-sized key lime tarts. Not to mention the sweet cherry tomatoes from the garden that we popped like candies.

Then there's breakfast, a veritable gourmet feast with newly laid eggs, fresh fruit and vegetables, just-baked goodies, fruit juices or smoothies and more. I drink decaf coffee and their press-pot decaf is very good. The weather was glorious while we were there, so breakfast was served on picnic tables outdoors. It's so lovely savoring the food and taking in the scenery while enjoying the convivial company of the other guests and the family.

The lovely couple staying in the eco cabin invited us in to see it. It's beautifully decorated and features a composting toilet indoors, a sink on the porch outside and a shower a short walk away, so not for those who want all facilities ensuite, but fun for those who are seeking a true rustic experience.

There's no light pollution, so the night sky is blazing with stars. It's very quiet at night and our sleep was deep and refreshing.

It's helpful having a car to get around, though one young couple without one was using taxis successfully.

There's enough to do in the area to consume your time, though it's really nice just relaxing at the farm, especially swimming in the pool on a warm day. It's the kind of place to take your time and linger. If you're on a busy schedule you might miss some of the special charm.

We found it to be an excellent value considering all that you get, not even counting the intangible extras that are priceless. We understood why some of the guests return over and over.

Thank you Mary and Bill for making our weekend very special!

I just saw your very comprehensive review and Thank you so much for all the attention to detail and for all the time you took to write it. It is very much appreciated. We are always so busy running both the farm and B&B that we often overlook encouraging guest to write about their stay and it does make such a difference in promoting our business. Please come back this summer and visit again. We are making preparations and looking forward to another fun, food filled and wonderful summer!

We have never been to a B&B where the hosts and staff were so genuinely warm, so hardworking, so intent on ensuring that each guest enjoy a superb time. And they succeed!

We brought our 2 grandsons, 10 and 7, for 3 days at Thyme in the Country, a perfect launching spot to enjoy the Dutch settlements (think Martin Van Buren and Washington Irving, the ex-President's guest who was inspired to write Rip Van Winkle and Legend of Sleepy Hollow based on local people and lore), Hudson River painters' homes (think Thomas Cole and Frederick Church), multiple art galleries and boutiques, plus fabulous farm to table restaurants--of various ethnic menus.

The boys would have been content to spend all their days on the farm: getting eggs, picking strawberries, swimming in the salt-water pool, playing tether ball with the owner's kind son, and helping out. In fact, the 7 year old decided to stay there and work for a month (we eventually persuaded him otherwise!). Mary Koch, the B&B hostess, and Heather, her assistant, would engage the boys in work or play. As the 10 year old said, "They seem to really want us to be here." And they did!

We have promised the boys that we will return. When I asked them to rate Thyme, they each said "10 Stars." They are right--Thyme in the Country is an experience to savor, relax, and enjoy. Hotel and B&B guests are seldom treated with more genuine affection. Thank you and Bravo/brava Thyme!

We were practically in tears reading that review. We read it twice out loud to have it really sink in. I don't know where to begin. We still smile every time we think about the moments of your visit. The baked fish, Grandpa cleaning the fish, making the fruit skewers together, the outdoor recital. So much happened that weekend and we enjoyed it as much as you did. Thank you for all the smiles and happiness you brought to us. We absolutely loved meeting all of you and hope to somewhere, someday meet again!

A beautiful setting outside the trendy town of Hudson, New York. There is a lovely pool- when we were there it was a bit too chilly and recent heavy rains had unleashed a plague of mosquitos. Because of the mosquitos we did not enjoy the outdoor areas as much as we might have, but our intent was to do a lot of exploring in the region, so that didn't matter. Breakfast is delicious and prepared with eggs from the family chickens and local produce. Be aware that the family (including adult children) live in the house. That said, they are some of the nicest, most respectful people you could meet.
I found the directions on the website were not precise; we arrived late in the day, so maybe in full daylight we would not have become lost. I would mapquest the location to supplement the directions on the site.
The location is central to many of the Hudson River Valley attractions.

Mary was the perfect owner and hostess! The house is very comfortable, with a creative mix of old and new decorations and furnishings. Mary made afternoon and evening snacks, and the breakfast contained fresh and delicious greens, tomatoes, herbs, and other food from her gardens. We ate outside at the picnic table the second morning, which was so pleasant; the whole property is gorgeous. It was fun talking to the guests, as none of us were in a hurry to go anywhere. Also on the property is the chicken coup, the pond, inground pool, the gardens, and the alpaca farm nearby. We really enjoyed our romantic anniversary weekend.
