In terms of activities hiking, yoga and vision board classes were among our favorites. There's nothing like doing something hokey with a girlfriend or two!
I highly suggest dinner at L'Auberge - The food is excellent and the ambiance cannot be beat.

It can be chilly in December and occasionally there is light snow, although you will still enjoy most activities. The large outdoor pool is likely closed then, but Mi Amo spa is open with nicely heated indoor & outdoor pools plus hot tubs. They also offer several classes, services and have a great restaurant.
They decorate for the holidays, too.
Mornings & nights will feel cold, but often the midday sun in Sedona is nice.
Just remember, they are located in a canyon, so shorter sun hours.
Trails will be open, although sometimes they are muddy (really red clay!) or icy in spots.
