If for your anniversary celebration (not business) I would recommend Starwood's "W Hong" located in the elements shopping mall with a direct connection to the airport train.
My old friend Bastien (is normaly is often found working in the Woo Bar. He will take great care of you and make your stay exceptional. You should let the staff know your special occasion when you book, they will take notice, I am certain. The Bliss Spa at the W is truly excellent, go for it.
For your special occasion you will enjoy the more adventurous ambiance of W Hong Kong and the cost difference will pay back in great memories.
I would recommend a dinner at the Morton's (in the Sheraton Nathan Rd) for a special evening dinning experience. Book in advance a table near the window midway+ toward the back of the restaurant . Relax and enjoy the evening lights show view across the bay from your table.
