Our group of two families (and five kids aged 10-14) stayed at Pook's Hill Lodge for for the last four nights of 2017, culminating with moongazing through a telescope, complimentary champagne and a piñata for the kids on New Year's Eve.

At Pooks Hill: Ceiling fans, yes. Air conditioning, no. I think you'll come to appreciate that when the howler monkeys go berserk at 3 a.m. (Hey, it is an experience!) and the night birds and other animals are on the move. It is an aural experience that would be missed with the racket of AC!
I can't speak to the Pooks Hill weather in July, although last year in Belize it was very hot and humid in general. The natural insulation of the thatch roof and the ceiling fans should provide comfort enough.
Just an aside, in the year we have lived here on Ambergris Caye, we have never used the air conditioning and there have been some exceptionally hot days with still air. Ceiling fans, on the other hand, are never off, it seems.
