Nothing but the best at Casa Gregorio in Castro de Volsci. Thanks to Mr Perfection, aka Gregory Aulensi, and crew we enjoyed a week of culinary bliss, tours and friendships. Especially cool we’re visits to a winery, olive grove, along with local meat, cheese and gelato establishments. Gregory’s booking, reservation and cancellation policies are also top notch. Grazie

Wonderful visit to Casa Gregorio: it’s first class owner/director Gregory Aulensi and first class staff provide only the best in hospitality, tours, and real deal italian cuisine. Visit September 2019 was a follow up to a 2013 excursion; both were excellent. The Frosinone country area is beautiful and abundant in Italy’s natural wonders; the tours capture them. We plan to return next year. We are grateful for Gregory’s booking policies, which are professional and accommodating. Grazie, Gregory.

I booked a trip for May 2020 in mid October 2019 under a promotion for 50% off the normal price and also traveler's insurance with John Hancock Corp.. My flight was cancelled due to COVID-19 and I was refunded via Expedia. I reached out to Greg several times (who didn't bother updating his website for future traveler's) for direction, I was offered only a credit for my trip until the end of 2021. When I asked how to proceed booking for a date in 2021 using my credit, Greg didn't bother responding and therefore I began to pursue a refund for my trip. Travel insurance refuses to do anything for me because the cancellation is "related to COVID-19" and so far, I am out $2749.00 for the trip. Greg refuses to refund based on the terms of receiving a promotional price for the trip which is non-refundable. He also responds to questions via email sporadically or if he has the time or simply feels like responding. I wrote this review to share my experience in dealing with Casa Gregorio to warn future traveler's of my poor dealings with Greg this far and encourage you to look elsewhere for your Italian holiday. Other companies that I was looking into for an Italian culinary vacation either emailed me or sent a letter stating they were refunding trips cancelled due to COVID-19 and were in better communication with me than the company I booked with! (Ex- Tuscookany was one of those companies).

I don’t know that I have enough or the right words to express how amazing Casa Gregorio is. Between the phenomenal and friendly staff, the beautiful property, the expertly planned and executed tours, the culinary instruction, and the delicious foods, Casa Gregorio is the perfect trip to the Roman countryside. Take your friends and escape to the stunning province of Frosinone where you’ll learn to make (from scratch!) and cook all the best Italian dishes. The chef (Valerio) is patient and an excellent teacher. The tours are varied—from wine and prosciutto tasting to ancient sites to medieval abbeys, so there’s something everyone will like. The guides/drivers (Pietro, Giuseppe, Andrea, and Luca) know and share the history of the area while safely escorting their passengers along winding roads. Every person at Casa Gregorio (including Gregorio) is welcoming and kind. Letizia, Carolina, Sarah, Massimo, Gaetana, and everyone else (who I’ve forgotten or didn’t catch their name) made us feel like part of the family. The town of Castro dei Volsci sits atop a hill and miraculously survived WWII (great story about that!). It offers views that can’t be matched. The actual Casa is a medieval compound that has been masterfully modernized and decorated. Each room is unique and beautiful. Truly, the trip was one of the best I’ve ever taken, and the hardest/worst part was leaving.

We visited last week. The owner and staff touched our hearts and this was a moving and over the top experience. The staff welcomed us into their home. This is partly a cooking school but more like an immersion program in Italian culture. Wonderful food; fun and informative cooking classes; excursions to diverse local wineries and food purveyors. Seriously the finest holiday experience around. Thank you Gregory and staff!
