I think it will be tough. The rooms are not cramped, but everything about them is bento-box small and I don't see them working for four people...

No, there's no bus from Roppongi Hills (where the Hyatt is located) to Disneyland. There are two subway lines at Roppongi Station within easy walking distance of the hotel, which should allow you to connect to Maihama Station just outside Disneyland.
