There are a few places in the world that are so unique because of the location, it is hard to compare to other hotels in their category...Amangiri, Belmond Hotels des Cataratas, One and Only Wolgan Valley, Oberoi Agra...well Chable Yucatan fits into that category. While I had been to Merida before, I had not visited this slice of heaven 40 minutes outside the city. This jungle chic Hacienda is a great blend of old and new with world class dining and spa. My only regret of our stay is we didn’t stay longer.

Two things stand out for this terrific hotel: the friendly, always smiling staff and the exceptional design. Rocco Bova, the GM, has put together a terrific staff, always ready to help and smiling the whole way. He actually met my wife and I at the airport to make sure we comfortable and handed s off to the driver to take us to the property. Service is truly there. Those who have read other of my reviews know that we are Amanjunkies and this property reflects that degree of service and style. The design of the property is a wonderful blend of a historic sisal plantation and the modern architecture that we love. The modern has been inserted so well into the IXI’IM Restaurant that both the historic and new shine. The individual villas are also beautifully designed with a wonderful indoor/outdoor relationship. The villa feels (and is) very expansive with the outdoor courtyard and private pool so well thought through that we used it as much as the more public areas. In short, quite a wonderful experience. One thing that is not clear on their website, they are happy to arrange quite wonderful tours. We spent the day at Chichén Itzá, about 2 hours away arranged by the hotel through Mayan Heritage. As a side note, we were there for New Years Eve and, as expected, they had arranged a wonderful outdoor evening of cocktails, live music, multi-course dinner and of course an Imperial of Moet champagne shared at midnight. What was not expected was a heavy thunderstorm that started at about 6:30pm and lasted well into the evening. While I am certain that there was an intense back-of-the-house effort to get the whole event under cover, you would never had know that they had planned for anything else. It was seamless and very, very festive - a tribute again to Rocco's staff and his leadership. While I could say a lot more, suffice it to say that this is one property we will return to, likely several times more.

We chose Chable after carefully studying many properties in Mexico for our one year anniversary, and while our expectations were high, we were still blown away at how great our experience was. Every single staff member we encountered was sincere and delightful to talk with. The grounds were so well taken care of that it felt as though we were in paradise. And the food - excellent, well thought out, and intentional. We LOVED the tasting menu experience at Ixi'im. It was one of the highlights of the visit. But the other food at Ki'ol and the Wellness restaurant were also fantastic. The spa, as everyone has mentioned, is really top-notch. I had three treatments and every therapist I had was great. They definitely keep their standards high. We also took advantage of some of the complimentary activities - we visited the Melipona bees onsite (they are a stingless bee, and their honey is rare) and learned about their history; we visited the Mayan cooking hut and made handmade tortillas with the sweetest ladies; and enjoyed a well curated afternoon tea with delicate little pastries. Our casita offered us privacy where we could lounge about in our pool at night, and savor the A/C when needed. The indoor/outdoor shower was very well designed - you step through glass doors to the indoor shower, and there are a second set of glass doors that open to the outdoor shower. We really couldn't find a single thing they could improve on - they scored a perfect 100% in our books.

I stayed here for Labor Day weekend, the resort was fairly empty at this time- at most I saw 2-3 couples at breakfast. The service at the resort is great, everyone was accommodating and made sure I had everything I needed without hesitation. ROOMS: VERY nice - the Casita design is lovely - I love the pool area with the table and lounge section. The special touches of the turn down service which included a treat placed near your bed are nice. I also appreciate it that they provide insect repellent because there are mosquitos, they also provide a flash light which I used when riding my bike at night, and I love that they provide a ipad for Spotify and you can listen to your music that is connected to the speakers in the room. My room was very clean, immaculate. My only compliant which I meant to tell the GM before leaving was a few of my plug outlets weren't working in the room. One actually was working initially then stopped after I plugged up the kettle they provide. GROUNDS: I love it here - the grounds are kept up, the pathways for clean when walking/riding your bike. They keep the property up. I really enjoyed having my own bike and exploring the resort that way. Activities: I scheduled a excursion to the ruins with the staff before arriving and that process was great. I also scheduled a Mayan cooking class, see the bees, tequila tasting (one of the best things I did there-Andrea did a good job) and temazcal ceremony. The only thing I wouldn't recommend is the Mayan cooking class- I actually wish I was reimbursed lol I just formed tortillas - I think for the price it should include much more assisting or they should lower the price. I wouldn't pay for that again. The Gym is also good - has new equipment. Overall, I would stay here again but for a longer time, its a lovely relaxing resort with great service and food.
