Bottega di Rosanna is a nice bed-and-breakfast in Neive. I stayed 4 nights and would go back there tomorrow.
Here are a few key points:
1. Comfortable rooms with bathrooms in the room. My room had a nice patio overlooking the neighbourhood.
2. Free parking...More
This small B&B is lovely. It is not to say the rooms are huge but it has a very quirky charm which, after staying at many typical rather up-market B&B’s and hotels, was great. Even writing about this B&B brings back happy thoughts.

I have a Agriturismo Bottega di Rosanna in the countries and B&B Dimora San Sebastiano in historic centre of Neive. In a 17th-century building in the old heart of Neive, one of the "Prettiest Villages in …MoreItaly", Dimora San Sebastiano welcomes guests to the pleasure of an atmosphere of days gone by. Two rooms dedicated to celebrated local figures: the first, named after Giorgio Cardino, is decorated with numerous works by the artist; the second, which has a loft and a solarium, is in memory of Romano Levi, and is furnished with many mementos of the famous grappa producer. Guests also have the use of a kitchen and a living-room with a frescoed ceiling. Traditional local dishes can be enjoyed in the nearby wine & food bar, La Bottega di Rosanna. Less

You problem will not be crowds, but the opposite, as many smaller tourist areas close almost entirely during the off season. You could check existing 2014 posted schedules for places that you want to visit, for an idea as to whether or not they might be open in December 2015. Even if you find many places closed, Torino is only an hour away, with a large number of world class museums and attractions. Plan accordingly, and have fun!
