Highly recommend this truffle-hunting trip! We are wild-mushroom hunters from Northern CA, so we wanted the real experience. This is it! Small groups up to 4 people at a time. Not good for kids, it takes some endurance and a bit physically demanding, because when you see the truffle-dog act, you have to run! You can do this almost any time of year - but the white truffle only grows around Thanksgiving time - the black truffle almost all the time. Riccardo is President of the local truffle association, he trains dogs and is passionate about truffles, which are underground mycorrhizal (meaning symbiotic relationship with trees) mushrooms. Christophe was also excellent as our English translator. The day we went, it was raining, but this did not stop us. We were picked up at our hotel in San Miniato and driven early in the morning to pick up sandwiches, then out to the woods. We spent pretty much all day in the woods. Needless to say it was wet, cold, and muddy. Yes we found truffles! After a quick return to our hotel and hot shower, we went with Riccardo to the Truffle Association headquarters. Then his wife, Amanda, showed us the best ways to cook with fresh truffles, which we ate for dinner that night. It's a fixed price per person, not cheap, but worth it! We are happy we did it and came away with so many great memories and new knowledge.…
