I did not visit the Hen Corner due to travel restrictions but did a virtual sourdough baking course with Sara. I sincerely recommend the course. Sara is such an excellent and caring teacher. She has an eye for your weak parts and makes sure you master at those. I am a newbie in sourdough baking but managed to produce a pretty decent loaf, I want to say an excellent load but surely maitre Richard Bertinet would disagree. Totally under the spell of sourdough baking and bread after the course.…

Although this course ended up via Zoom it was worth it. I have been making bread for years yet Sara taught me new techniques which has improved my bread making significantly. Sara is very knowledgeable and personable - lots of anecdotes - and the format worked incredibly well. As I made my bread along with Sara, She was able to review and guide me along the way. I would highly recommend Hen Corner courses, be they bread making, hen rearing, bee-keeping etc. …

Thanks for this lovely review. We only started offering online/virtual courses this year, due to the COVID restrictions, and have been thrilled to see the positive responses. Our small groups still ensure personal input and as we bake together we can watch each other’s technique and can continue to learn together. As guests are baking along with me from their own kitchens, using their own equipment, they have the experience and confidence in that same environment to bake without me in the future. My husband gave me a gift voucher for the Introduction to Bread Making course at Hen Corner as a birthday present. I couldn't attend the original date as that was the week that we went into Lockdown! However during Lockdown, Sara very kindly offered me a place to join a virtual bread making course she held via Zoom as a taster of what we'd be learning on the day. So I am able to recommend her virtual courses too! Sara is a lovely and friendly host, who immediately puts you at ease in her home and makes you feel as though you've been there many times before. The house is a Covid secure venue, with handwashing facilities, hand sanitiser and masks available. She also has the option of keeping the bi-fold doors open, weather permitting, to keep the air circulating! After a delicious coffee and pastry, we got to work on the first of the 3 doughs you make during the course. We started with white bread dough. Half of which became a small white loaf and the other half became olive bread. Next was a dough made with granary flour. We made a plaited loaf and some rolls. Finally came the much trickier sweet enriched dough. Some of this became small rolls filled with dark chocolate, and the rest became a cinnamon babka. Whilst the bread was baking, we sat down to a lovely pizza and homemade elderflower cordial. At the end of the day, we left with an enormous bag filled with all the things we made, which my family was extremely pleased to see when I got home! Sara is very knowledgeable about the ingredients, the bread-making process and lots of other subjects. There are plenty of other courses available and I'm sure I'll go back to learn some other new skills in the future!…
