It was a true privilege to observe the production process of Ibérico ham.
Just as visiting a winery is essential in expanding one's appreciation of wine, a visit to Ibérico ham facilities is essential in fully appreciating such a delicious and complex product as Ibérico ham.
The tour provided by Julián Martín was very comprehensive and professional, as you would expect from the second largest producer of the product. Our guide was very passionate about the product and took us up close to all key aspects of the production process, from receipt of the raw product, to the curing process which is steeped in tradition, through to packaging for sale. The curing rooms, with their endless rows of perfectly aligned Ibérico legs, was an unforgettable and mouthwatering experience.
Would highly recommend this to anyone travelling through the Salamanca region, and if you haven't tried Ibérico ham, you are missing out!

What a wonderful experience! A must do! Pablo, our guide, was amazing. Lunch was delicious. Would do this again
