We are going to Tongariro in early January and will be arriving at the National Park train station from Wellington around 1:15pm. It seems that it gets dark after 9:00; would it be crazy to attempt the alpine crossing starting in the early afternoon and finishing around nightfall? If that's not feasible, what are some good alternatives in the park that could be done comfortably in an afternoon?

We would not recommend starting the Tongariro Alpine Crossing that late in the day. You could instead head to Whakapapa Village and visit one of the shorter walks for the afternoon (eg. Taranaki Falls, Ridge Track, Silica... More
Where is the best place to get an up to date weather forecast for the day that I want to do the one day Alpine crossing end of April or early May 2017. Is this a good time to do the Hike, weather permitting?

It's really allright , new zealand changes weather all the time, you will most likely find good weather, but just be ready with a rain jacket and sunscreen (in case)
