Our class (Old & New Mexico Chiles) had a great menu! We loved everything except the tortilla soup (overpowered by chiles). We plan to make many of the recipes again at home! The space is very crowded once you start cooking. Luckily all the folks in our class were friendly and already knew cooking basics. The chef had a lot of knowledge, was very funny, but asked us some personal info that we found rather intrusive. Collin the bus boy worked his tail off, but that meant there was little nonrecyclables sent to the landfill. …

Three cheers for Johnny V! We had a wonderful fun evening, and my expectations were not terribly high, honestly. And when Johnny explained the menu we were going to make as a group, my thought was, "that sounds delish. Can't you just make us up all of that?" Each couple had at least one dish to be responsible for. Johnny was a guiding hand with each as the timing called for. It was like watching a dance-master. So we made 6 dishes as a group, 1 of which (fish tacos) we have already successfully made, and there are 4 other dishes we know we'll be adding to our repertoire. Johnny V is a talented, knowledgeable, gregarious, and fun chef!!! My husband and I took one of his holiday cooking classes while visiting Santa Fe and our high expectations were exceeded. Definitely a highlight of our trip to Santa Fe! My husband and I really enjoyed it (I love to cook, he likes to cook) Johnny was really fun and had the right mix of humor and education on the local cuisine. I can’t wait to make the recipes at home.

We had so much fun, learned a lot, and ate great food. Even though I worked on only a couple of the recipes, the chef was careful to draw our attention to tips he was giving to other students as they worked on their dishes. Definitely would recommend to someone who is not a chef, but wants to improve their cooking skills. …
