Three cheers for Johnny V! We had a wonderful fun evening, and my expectations were not terribly high, honestly. And when Johnny explained the menu we were going to make as a group, my thought was, "that sounds delish. Can't you just make us up all of that?" Each couple had at least one dish to be responsible for. Johnny was a guiding hand with each as the timing called for. It was like watching a dance-master. So we made 6 dishes as a group, 1 of which (fish tacos) we have already successfully made, and there are 4 other dishes we know we'll be adding to our repertoire. Thanks Johnny for a great and enriching evening

Our class (Old & New Mexico Chiles) had a great menu! We loved everything except the tortilla soup (overpowered by chiles). We plan to make many of the recipes again at home!
The space is very crowded once you start cooking. Luckily all the folks in our class were friendly and already knew cooking basics.
The chef had a lot of knowledge, was very funny, but asked us some personal info that we found rather intrusive. Collin the bus boy worked his tail off, but that meant there was little nonrecyclables sent to the landfill.

I attended last night's "Sabor Santa Fe" cooking class with Chef John Vollertsen ("Johny V") at the well-stocked Las Cosas culinary supply store, and I loved it! The three-hour class and dinner was well prepared and masterfully directed by Chef Vollertsen. Our five-course menu included recipes and demonstrations of guacamole, salsa, fresh green salad, Mexican Beer and Cheese soup, Mexican lime chicken scallopine served with green chili polenta, and dulce de leche ice cream with an innovative (and addictive !) red chili caramel sauce. Our group of seven students was comprised of two couples visiting from out-of-state, two locals (who frequently enroll in Johnny's classes, and myself. We were all able to sit around the cooking island while the chef gave an outline of the menu, the dishes, their preparation and cooking tips, including ingredient procurement and tips to make the dishes successful. We then divided into three 'teams' to prepare portions of the meal ;hands-on'. Every dish was scrumptious and memorable. The recipes weren't overly complex, and I'm sure I will make many of these dishes for friends since I know how delicious they taste and how quickly it takes to prepare the dish. The pace of the class was relaxed and Chef Vollertsen is very personable, witty and engaging. He makes everyone truly feel like part of the "team." You almost feel as though you are enjoying a dinner with new friends in his home! This is an excellent way to learn about the culture and tradition of New Mexican cooking and a way to explore the "City Different" in a creative way.

This class was taught by Chef Johnny Vee. The food was excellent and a lot of fun. Lots of interaction and hands on cooking.

I thoroughly enjoyed the class in Cajun/Creole cooking last Saturday. Jambalaya, oysters, BBQ shrimp and bread pudding - delicious. This was my 6th or 7th class with Chef Johnny V, and I have always learned a lot and loved dining on our group efforts. This is not an "I'll show you" class; it's "we show you and we do" learning. Always lots of tips from foodie classmates on where to buy foods and condiments, and the better restaurants. And the cooking store is first rate; I've outfitted our Santa Fe second home kitchen from their inventory.

We had so much fun, learned a lot, and ate great food. Even though I worked on only a couple of the recipes, the chef was careful to draw our attention to tips he was giving to other students as they worked on their dishes. Definitely would recommend to someone who is not a chef, but wants to improve their cooking skills.

We had the absolute best time at this cooking class. Johnny Vee is a terrific chef and a wonderful host. Husband and I registered for the New Mexico Favorites class and were really pleased with the variety and quality of the food. This a very hands on cooking which we love. Thank you for an enjoyable evening and Johnny Vee’s book is terrific too.

Routinely go to a cooking class when traveling. It's a great way to explore the culture, learn a few cooking tricks, and enjoy some great local food. Las Cosas did not disappoint. We enjoyed this hands-on class very much. The two hours flew by. Johnny Vee was entertaining and knowledgeable. He even supplied take-home bags when we couldn't finish all we cooked. A little shopping on the way out was also fun in this well-stocked store. Would recommend for friends or couples.
Remember, when possible, take a hands-on class versus a pure demonstration. Much more enjoyable.

We took the New Mexico Favorites class as part of a Groupon weekend in Santa Fe, and it was great. Chef Johnny Zee clearly had an excellent understanding of southwestern cuisine, along with a wonderfully positive personality. All the recipes were printed for us, and the 10 participants were paired off to do two recipes each, followed by lunch (all the great stuff we had just prepared). There were plenty of techniques and tips, and enough hands-on experience to make sure we all knew what we were doing. Plus, it was great fun.

4 of us took this great cooking class from Johnny Vee at the Los Cosas Cooking School. So much fun. Class is about 3 hours, with lots to eat at the end. For the locals, great to take home the extras. We had about 12 in the class. All hands on. Johnny Vee is a great teacher and fun to listen to his stories. Highly recommend.
